Yoghurt pot muffins

A great idea for cooking muffins with a flavoured yoghurt pot...

Preparation

  • Total Time 35 mins

  • Cooking Time 25 mins
  • 100g yoghurt (any flavour!)
  • 75g sunflower oil (3/4 of a yoghurt pot)
  • 100g caster sugar (1 yoghurt pot)
  • 300g self-raising flour (3 yoghurt pots)
  • 1 tsp baking powder
  • 100g dried fruit (1 yoghurt pot - optional)
  • 100g chocolate chips (1 yoghurt pot - optional)
  • 1 egg
  • 50ml milk (1/2 yoghurt pot)
  1. Preheat oven to 180'C/Gas mark 5
  2. Empty yoghurt into mixing bowl and keep pot to measure out remaining ingredients
  3. Measure out oil in pot and add to bowl
  4. Break egg into yoghurt and oil, add milk and mix together
  5. Add 1 pot sugar to bowl and mix
  6. Add 3 pots flour, baking powder and 1 pot of dried fruit/choc chips and fold together
  7. Don't over mix the muffin mixture at this stage, just enough to combine flour and wet ingredients
  8. Spoon into muffin cases or a greased muffin tray and bake for 20-25 minutes or until springy on top (bake mini muffins for 12-15 minutes)

Variations

You can make any flavour combinations, you are only limited by the flavour of yoghurts you can buy at your supermarket. I've tried:

  • Strawberry yoghurt and white choc chips
  • Butterscotch yoghurt and raisin
  • Orange yoghurt and chopped marzipan
  • Toffee yoghurt and coconut
  • Toffee yoghurt and apple

    Very nice recipe and so versitile. I made a peach one with some raisins and chia seed. I did reduce the sugar to half and I found it more suitable for smaller children. I'll definitely try different combination. So excited I found this recipe. Thx a lot.

    I have been making these for over 5 years now.. They are so easy and great if a friend arrives unannounced. They don't take too long and using any flavoured yoghurt you have. Using the yoghurt pot to measure also helps on wash up. Give them a try. A winner in my house.

    These muffins are fantastic, great results every time, we sometimes use plain or greek yoghurt and add cinnamon and raisons, yum, you can also reduce the sugar a little bit and add skimmed milk to replace if you're being healthy!

    Fantabulous recipe! My children really wanted to make some cakes but we didn't have any margarine so luckily I found this idea! Peach yogurts, Strawberry & Chia seeds mmm Really Yummy!!!

    Just made these - turned out ok and taste ok but did not rise very much, used a bit less oil and did not over mix batter so not sure if I did something wrong when they did not rise.

    I made these in my work, we used goats milk and yogurt and gluten free flour, we also made cherry and dark chocolate ones and the goats milk and yogurts were the better ones by a mile. We make the goats ones because of special diets and the staff really enjoyed them aswell.

    i have tried these for several times with different flavour youghurt and fruit.but the muffin wasn't cooked inside properly for the time mentioned .it takes more than half an hour.i have tried other muffin receipes and it turned great. i dont know what i did wrong.i follow the recipe exactly

    These are good but VERY greasy. I would say that you need considerably less sunflower oil than 3 quarters of a pot. Thanks for the recipe though! x

    These turned out great. I made 6 large muffins with the mixture and used strawberry yoghurt, white choc chips and raisins. Tasted just as good as ones i buy in a coffee shop. Will be making these regularly!

    This is great. No need to use the scale, just make the pot to measure everything. We used plain yoghurt and I added a pouch of fruit smoothie my daughter decided she didn't like anymore. Together with chocolate drops they were moist and yummy. We got 12 mini muffins and 5 normal ones out of it.

    Made these last night with strawberry yogurt and fresh banana and they were fab. Loved them that much that I made a second batch with raspberry yogurt and fresh strawberries. So quick, simple and most importantly tasty!!

    I made these this morning and they were really nice. I used black cherry yogurt and fresh apricots. I only used 1/4 pot of oil though, and added extra yogurt.

    Just made these with my son, so easy to make and i used apricot fromage fais and necturens. They taste so yummy and are really light. Def make again.xx

    My daughter Olivia (3) and i are baking these as I type. I did not use oil, but a small amount of milk, 3 table spoons of plain muller yogurt, danone shape carmel dessert fresh blueberries and the rest of the ingredents are the same. They smell amazing, hope the taste as good. I made 2 small heart shaped muffins and a (loaf tin) size cake. Not much mixture , maybe i'll double up on the ingredients on the next go.

    Yummmmmmmmm! I made these last week, used vanilla yoghurt and choc fudge chopped up. Was a hit with my 13mth old and even more so with me and my OH! :) Making more this week with a slightly healthier fruity filling :)

    Made this today with my 4 year old. Mango and passionfruit yog with blueberries and banana (bit random but what we had!). Thought these were gorgeous and I don't like muffins normally!

    my 5 year old was very proud to have made these on his won - he made apricot and white chocolate, great for using up the one yoghurt that the kids don't want to eat! We did forget to add the milk but they worked just fine. Might try toffee apple tonight or or balckberry and apple - so many choices!

    I made these with a pot of hazelnut yoghurt (150g) from sainsburys. I added half a pot of white choc chips and half a pot mini fudge pieces. They are a bit sweet but I'm blaming the white choc as I'm not keen. Apart from that they turned out lovely, fluffy and light. Next time I will be using black cherry yog and dark choc chips! I can see these becoming a family favourite especially for lunch boxes lol. The mix was quite thick but I used 2 spoons and filled the papercases nearly to the top. Thanks very much to the poster of this recipe its fab. I also have a bowl and spoon to wash up so bonus!

    brilliant idea my 2 yr old twin boys loved chucking everything in the bowl and mixing. They're dairy intolerant so I used Alpro yog and soya milk instead.

    these are grate i used strawberry low fat yoghurt and choc chips and instaed of milk i put low fat natural yoghurt and just a lil milk. defo be making these again.xx

    do you make these with 200ml yogurts or 500ml? If I use the wrong size the egg amounts won't be right will they?

    These are fab! I did not use any oil though i used butter because the thought of oil in a cake went through me lol, i made banana and golden syrup muffins they were so so nice!!

    This is such a great recipe. I was able to let my 8 year old make them herself while I did the ironing. She got such a kick out of making them on her own. I also helped my 5 year old son to make them on a rainy day last week. What I love is that you can basically use what you've got lying around. He made apricot & choc chip and my daughter just made chocolate ones.

    Ive made these a few times the first time the mixture was a bit thick so the second time i added 1/2 a pot of milk and they were lovely but didnt last long.

    We've made this recipe a couple of times and the muffins are lovely! Like one of the posters above, on 1st making it, the mix seemed a bit doughey, so I put in 2.5 pots flour rather than the 3, using muller light pot. Also, I used veg oil rather than sunflower cos that's what I had in. We've made rhubarb & custard - I put 1 spoon of cake mix in the paper case, a blob of ready custard, followed by another spoon of cake mix. Also just made choc orange with mullerlight mandarin & choc chips. Mmmm!

    I made these today and they were really heavy and horrible. Not sure if I did something wrong but I did follow the recipe carefully and sieved the flour too. The mixture was a dough like consistency once all mixed up and far too thick so I added a splosh of milk and an extra egg to make it a bit wetter. Maybe my yogurt pot was just too big...
