This is a great one for the kids to help with as they love crushing the Weetabix...

Preparation

  • 300g self-raising flour
  • 225g sugar
  • 200g dried mixed fruit
  • 2 Weetabix, crushed
  • 1 tsp mixed spice
  • 275ml milk
  • 1 egg, beaten
  1. Measure out all the dried ingredients into a large bowl
  2. Pour in the milk and egg and mix well (the mixture will look like a lumpy batter)
  3. Pour the mixture into a greased and lined loaf tin
  4. Bake at 130'C/Gas mark 3 for around 1hr 15 minutes, until it is firm to touch, golden brown and a skewer or knife comes out clean
  5. Once cooked, turn out of the tin onto a wire rack and remove the greaseproof paper
  6. Cut into slices when cool

Tips

This recipe has hardly any fat at all, and plenty of fibre. Slices of this loaf are delicious toasted and spread with butter.

Kids love helping crush the Weetabix, but it can lead to lots of mess! To avoid this, pop the Weetabix into a freezer bag, squeeze out as much air as you can, and seal it up. Then hand it to your little one and let them have fun bashing and squishing it to break up the Weetabix. Older kids can also help with weighing and measuring the other ingredients, and stirring it all together, making this a perfect bake for rainy family weekends.

If you're following Slimming World, or just want to cut the calorie content even further, you can always swap the sugar for a sweetener like stevia or xylitol. There's already plenty of sweetness in the dried fruit, so this still tastes totally yummy with sweetener instead of sugar. You can also opt for a lower-fat spread on the toasted slices of cake.

Storage tips

Your Weetabix cake will keep in an airtight container for up to a week. You can also freeze it; we suggest freezing individual thin slices in separate freezer bags; then you can just pop a slice in the toaster straight from the freezer when you want a quick snack.

Variations

  • This loaf would work well with any mixture of dried fruit, such as raisins, sultanas, dried apricots, glace cherries ... chop the fruit up if it's in large pieces. It tastes great with banana, too!
  • Instead of Weetabix, you could also try making this cake with shredded wheat, or any other similar breakfast cereal; just check the sugar content if you're on a slimming kick.
  • Want to get decadent? Why not make this with chocolate Weetabix instead? You could also melt a little dark chocolate (in a glass bowl over a pan of simmering water), and drizzle it over the top of the finished cake.
  • Weetabix is vegan, so if you want to make a plant-based version, just swap the milk for oat or almond milk, and the egg for 3 tablespoons of aquafaba.

    Made this cake with my 3 year old daughter - she loved making a great mess squeezing the weetabix everywhere! Really simple to make and tastes delicious - reminds me of malt loaf a little bit. Lovely with a cup of tea or just on it's own. Will definitely be making this again

    Hi Sapna - mixed spice is available to buy with all the other spices in the supermarket, I think it's a blend of cinnamon, ginger, nutmeg, and maybe cloves. Lovely sprinkled on toast with real butter too!

    Just made this lovel healthy snack, needed to bake a little longer but we all love it, including our 17 month old. Don't think it will last long. Used chocolate weetabix. Yum yum!

    I remember this cake from my childhood,my mum use to make this from a slimming world receipe,if you omit the dried fruit,use sweetener instead of sugar and use skimmed milk,you can reduced the calorie content.

    Easy to make and turned out lovely. Used half dried cranberries/half raisins and soaked the Weetabix in some milk first before crushing with a fork. The recipes are so easy to find and use here, I always have a look if I feel like baking or cooking something different :)

    I made this a couple of days ago using bananas as someone suggested in an earlier post. It was so yummy! Everybody who tried it said it was really nice and my 16 month old daughter loved it too.     i made this cake yesterday,how easy,delish and cheap,it's fool proof.infact we loved it so much it's almost gone so today i'm making another one but i'm going to use 50g each of raison's ,dates,dreid apricots an walnuts.Thanks to the lady for sharing her variations,i'm also going to try the apple and cinnamon verion which sounds yummy.I highly recommend this recipe to everyone .

    Tried this recipe for the second time today (made it the first time about a month ago) and seriously its so easy, I do love a good old 'bung it all in' recipe like this! My 2.5 year old really enjoyed helping me measure it all out and crushing the weetabix. Oh, and of course it tastes lush!!

    Ive done this recipe loads of times ..... but just found an even yummier version.... i was baking and decided to to the weeabix cake but had no plain weetabix..... so tried the chocolate version..... I suggest you try this its great

    Have been making this recipe for a number of years since it was posted on the MSE website. A couple of variations I use is Apple and Cinnamon loaf where I add a couple of grated apples, and replace the spice with cinnamon. Also banana bread where I add 1 or 2 mashed ripe bananas and replace the spice with cinnamon and ginger. I have occasionally forgotten to add the weetabix and it still comes out fine. Also good to use up all the odd bits of sugar and fruit you end up with at Christmas. Yummy, yummy and I also freeze it in slices for lunch boxes.

    I made this cake yesterday with my 2 year old, it was great fun and very easy. I made it using sultanas and brown sugar. I had no mixed spice, so I added a drop of vanilla essence instead. It is very yummy and the whole family loved it even my 1 year old. I will definately be making it again and will try it with the mixed spice.

    Hi i'm completely new to site today - i've just made this cake and i'm soooo impressed a fat free cake that tastes good! My seven year old loves it was si easy to make. I used dried mixed fruit and divided the mixture between two sandwhich tins and it turned out lovely! My son has asked for it in his packed lunch on monday!
