Tasty potato and parsnip with carrot

Preparation

  • 1 potato (peeled and diced)
  • 1 parsnip (peeled and diced)
  • 1 carrot (peeled and diced)
  • thyme (fresh or dried)
  1. Peel and dice the vegetables.
  2. Place the vegetables and a small sprinkle of thyme in a steamer or cover with water and bring to the boil.
  3. Cook for 15 minutes or until the vegetables are soft.
  4. Puree adding some of the reserved cooking water to loosen the mixture so that it becomes soft.

Tips

It's better to mash potato or use a mouli as a blender will release the potato’s starch and create a glutinous consistency.

However, you can also skip the pureeing stage altogether if you like! Just be sure to cook the vegetables thoroughly until they're soft enough for your baby to gum. If you're trying baby-led weaning, just cut the potato, parsnip & carrot into adult-finger-sized sticks, that your baby can easily pick up and munch on.

Variations

Babies love the sweet flavours of parsnip and carrot. To make it even more tempting for your baby, why not try using sweet potato instead of regular potato? Or, if you're trying to introduce your baby to new flavours, why not stir in a bit of a more bitter food like cooked spinach? Start with a small amount, and gradually add more to help your baby learn to like the new flavour.
