Preparation

  • Total Time 25 mins
  • Preparation Time 5 mins
  • Cooking Time 20 mins
  • 1 potato (peeled and diced)
  • 1 carrot (peeled and diced)
  • ½ leek (cut into rings)
  • 1 small skinless, boneless chicken breast (cut into chunks)
  • thyme (sprinkle)
  1. Add all the ingredients to a saucepan and cover with boiling water, cover and simmer for about 20 minutes or until everything is tender
  2. Blend to a puree

Tips

Chicken is a good source of protein and this easy chicken casserole recipe is a great way of introducing it into your baby's diet – you might even enjoy the non pureed version too!

Although the method says to puree the finished casserole, it's completely up to you whether you do or not. If you're doing baby-led weaning, your baby will love picking up the pieces of chicken and veg – expect plenty of mess, though! And make sure everything's thoroughly cooked, so it's soft enough for your baby to gum.

If you do prefer to puree, you might like to start with a smooth puree. Then, as your baby grows, blend it less each time, or switch to mashing, so your baby can learn to enjoy lumpier textures.

Variations

Try adding different vegetables – swede, parsnip and sweet potato all work well in a chicken casserole.

Hi ladies I started weaning my little one at 4 and half months - mainly starting with baby rice and baby porridge. I've since been giving him various combinations of veg (parsnip and broccoli, sweet potatoe and broccoli, carrot, sweed and potatoe which all seems to be going down well when mixed with a little formula. He's just turned 6 months now.. Should I continue with just giving him veg till 7 months or is it ok to try this receipe now seeing as he was has had all his first tastes a lot earlier? He turned 6 months on 16th Dec! Thanks

Just made this for my little boy - he hasn't tried it yet, but I have and it's lovely! I fried the leeks off first to caramalise them, then fried the chicken before adding the rest of the ingredients.

could this be done in the slow cooker and leave it on low? I would brown my chicken first though. Just it would be ideal if you could just leave it in your slow cooker and go out.

It's fine to freeze Sandeep but be sure you reheat it to a very high temperature once you defrost it to kill any bacteria

Can you freeze this recipe in small weaning pots, or must it be used straight away because it has meat in it?

is it ok to freeze this as a meal even tho it has chicken in it?

I've done a similar recipe using chicken leg (organic), potato, parsnip, leek, sweed and a bit of cauliflour too. After about 1-1.5 hours I took some of the veg and blended it separately (just in case my lo didn't go for the chicken but still he'd get the chicken flavour), also I took out some of the stock and put in freezer. The rest I blended up. It was his first go at meat and it was a success, he loved it, I was so relieved. Blended chicken looks disgusting but it tasted good! Make sure you freeze some meals - ice cubes best.
