Vegetable soup for babies and toddlers

Preparation

- 2l vegetable stock
- 1 butternut squash (peeled and chopped into cubes)
- 2 sweet potatoes (peeled and chopped into cubes)
- 1 swede (small, peeled and chopped into cubes)
- 4 carrots (medium, peeled and chopped into cubes)
- 1 courgette (peeled and chopped into cubes)
- 1 onion, chopped
- 2 bay leaves
- You will need a large pan as this makes loads
- Fry the onion in a little oil until softened
- Peel and chop rest of vegetables into cubes
- Add stock to the onion and then add the rest of the veg and bay leaves
- Bring to the boil and simmer for 20-25 minutes (until all of the vegetables are tender)
- Remove bay leaves and blend to desired consistency
- Cool, serve and freeze any leftovers for a later date

Tips
Opt for a low-salt stock if making for young children or babies; traditional stock cubes can be very high in salt, and may contain too much for tiny tummies.
This vegetable soup makes a lovely thick soup depending on how much stock you add. You can add a variety of vegetables and puree it so it's a perfect meal for weaning babies and toddlers too!
Variations
This is one of the most versatile soup recipes for toddlers. Here are some ideas for ways to tweak the recipe to make different kinds of soup:
- Use whatever vegetables you like and are available/in season. Peas, broccoli, green beans, aubergine - whatever you have in the house will make a delicious soup.
- Add different herbs and spices to vary the flavour.
- Bulk it up by adding some well-cooked lentils.
- Add soft chunks of meat such as chicken or well-cooked beef; these will puree nicely for younger babies, and can be left as soft chunks to encourage chewing for older babies.
