Tomato soup for kids

Preparation

  • 1 onion, chopped
  • 2 carrots, diced
  • 1 potato (large), sliced
  • 1 red pepper
  • 400g chopped tomatoes
  • 2 garlic (cloves), crushed
  • 2 tsp vegetable bouillon
  • 2 tbsp olive oil
  • 150ml water
  • 1 tsp sugar
  1. Fry the onions in the olive oil for a couple of minutes until they become transparent
  2. Then add the carrot, potato and red pepper and cook for a further 5 minutes
  3. Add the remaining ingredients, bring up to boiling point and then simmer for 20 minutes or until the vegetables become soft
  4. Liquidise and serve!

Tips

This recipe makes two adult portions or four toddler portions. Kids love this and it's a great way of getting extra veg into your children's diet.

Kids will enjoy helping you to wash the veg - older kids can help with chopping, too.

This recipe is ideal for vegans – and if you make sure to use a gluten-free bouillon, it's great for those with gluten sensitivity, too.

Variations

If you're not vegan and want a creamier texture, swirl in a dollop of thick cream just before serving – delicious!

Fancy a chunkier soup? Just don't blend it all the way! You can either skip the blending altogether, or just give it a quick burst to leave a few bits.

Want a more filling meal? Add some pasta and leftover veg for something a bit more substantial.

    I tried this recipe yesterday and it went down very well with all. We found it to be a real winter warmer, and I think it's going to be a favourite all season. Lovely and hearty served with chunky bread.

    It can be a pain getting the stringy bits out of tinned tomatoes, if the children fuss. I use Passata - usually quite cheap in supermarkets, or if you can afford it, M&S passata has a lot of texture. Definitely add basil!!!! Try also with chunky croutons - great for using up stale bread.

    i made this on sunday . but i just bunged everything in the slow cooker on high for about 4- 5 hours. my partner wasnt keen on it on sunday but we both had it for work today(tues) and i really enjoyed it and my oh said it tasted much nicer and has had work mates ask for the recipe.

    I made this today and dont know where i went wrong! There was just no real taste to it - tried adding pepper, salt, basil but was still really bland! But I'm not the greatest cook anyway!

    A lovely recipe and it makes a huge batch! We had it for lunch with some brown bread and it was a hit with everyone. Next time I think I'll add a few herbs probably some basil or oregano.

    What a great recipe, went down a bit hit with my boys aged 6 and 2. Fantastic for getting veg down them. My husband and I enjoyed it too. Lovely sprinkled with cheese and black pepper, and served with crusty bread. Double the recipe and get plenty to freeze for a quick lunch or dinner.

    Just made this and it was lovely, added some cherry tomatoes to it, as we had grown them this summer and had been in fridge for a while(about 2 punnets worth). And so added 2 more carrots, extra clove garlic and another pint of stock. Another great recipe from this site!!!

    i tried this recipe today and have to say it was delicious. I too added cream (before id read the above comment!!) and it makes it divine! I also added some coarse ground black pepper and some basil. A real winner and so easy to make! I would recommend this to anyone attempting soup for the first time and old pro's!

    Really nice, I tried it with 1 pint of water and 1/4 pint of cream instead of just water, gives it a creamy texture and is a winner for even the fussiest of kids!!
