Recipe for a quick and easy tomato pasta sauce...

Preparation
- Total Time 25 mins

- 1 onion, chopped
- 1 garlic (clove), crushed
- 1 tbsp tomato puree
- 500ml passata
- 1 tsp fresh basil, chopped
- 1 tsp black pepper
- ½ tsp sugar
- Gently fry the onion and garlic on a low heat for a few minutes, in some olive oil
- Add the tomato puree and cook for a further couple of minutes
- Add the rest of the ingredients, stir well, then cover the pan and leave to simmer for around 15 minutes
- Allow to cool slightly and blend if you prefer a smooth sauce
- Serve over pasta and top with grated cheese

Tips
Use this sauce as a base for a meat or vegetarian bolognese, lasagne, chilli etc
Double or even triple the ingredients, make a big batch and freeze it.
Variations
- Adding a variety of vegetables such as chopped red pepper, carrot and mushroom to the sauce when you add the passata or tomatoes
- Puree the sauce if preferred to hide the vegetables from fussy children and use as above

I've been making this for my daughter- now nearly 3- since she was about a year old & she loves it. I add a courgette, about 6 mushrooms & about 4 medium carrots & use 3 tins of chopped tomatoes. Then I freeze into portions & defrost over night when needed, it's great with just pasta or mixed with mince & spaghetti for a simple spaghetti bolognese.

I don't know what the secret to this sauce is but my daughters love it. Quick and easy to make and a guaranteed hit. I make it all the time.

My son josh will be 7 in june, hes been told hes a fussy eater by the hospital, i just wanted to make sure nothing was wrong inside, he used to love Pasta, when he was growing up, and then he got ill, everything went backwards, he takes dry bread to school, he wont have anything on it, if i tried he would leave it, i would love him to try dinners at school, he loves stew's, with all the goodness in, he likes red apples, pears etc, i just like to know how i can get josh to eat different foods, i have tried taking him the shops, and he picks items up, and tells me what they are, i thought it would be good to blind fold both of us, and try it that way, he looks at food and says no, i said u havent tried it yet, please help, kind regards debs

I use this sauce for everything. I often make double the amount and freeze half so I have it to hand. I blend it down to make a pizza sauce, use it with tuna to make a tuna pasta bake. I also add mushrooms, cherry tomatoes, mixed peppers and chilli for a more hearty sauce.

This is yummy. I added some mixed herbs and some celery too; a great way to use up some of those extra veg you buy!!
