Toddler tomato & chicken rice

This easy risotto style recipe will please even fussy toddlers, just add whatever vegetables they like best...

- 1 tbsp sunflower oil
- Garlic (1x clove), crushed
- Onion (1/2 a small onion), finely chopped
- 200g uncooked rice
- 235ml natural chicken stock
- 75g broccoli florets, chopped
- 1 carrot (peeled), finely chopped
- 200g chopped tomatoes (1/2 a tin)
- 1 tsp tomato purée
- 200g chicken breast (cut into small pieces)
- 75g peas
- Black pepper (to taste)
- Fresh basil, chopped
- Pour a dash of sunflower oil into a saucepan and add diced onions and crushed garlic - stir
- Add just enough water to cover the onion and cook until tender
- Add the rice, chunks of chicken, chicken stock, black pepper, broccoli, carrot, tomatoes and tomato puree.
- Cook until vegetables are tender and chicken is fully cooked, which will approximately take 20-30 minutes (add more stock if needed)
- Finally throw in the peas and basil and heat for two minutes until it’s gently simmering around the edges

Tips
This recipe works well with any rice, but try using risotto rice for a really yummy texture.

I have been unable to cook this without it sticking to the bottom of the pan. Its on a low heat and I added more water .

I have just made this for my 4yr old daughter.She absolutly loved this and there was enough left over for me and my other half So Delious. Only thing i can say is there was no need for cornflower It was thick enough :)
