Individual creamy chicken pies topped with mash

  • 250g potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 2 skinless and boneless chicken thighs, diced into small (2cm) cubes
  • 50g butter
  • 50g plain flour
  • 350ml milk
  • 25g frozen sweetcorn
  • 25g frozen mixed veg (such as peas, carrots and cauliflower)
  • 30g Cheddar, grated
  1. Preheat your grill to high. Lightly grease 4 ramekins with butter or spread (you could also use a medium-sized ovenproof dish if you don't have ramekins).
  2. Boil the diced potatoes in a large saucepan for 10-12 minutes, until tender. Drain, mash and place to one side.
  3. Meanwhile, make the filling. Add the olive oil to a small frying pan, add the diced chicken and cook for 2-3 minutes until golden. Place to one side.
  4. Melt the butter in a saucepan. Stir in the flour and cook for a few minutes over a medium heat, stirring constantly, until you have a golden roux.
  5. Slowly add the milk, stirring as you go. Add the chicken, bring to the boil and then simmer on a low heat for 5 minutes until the chicken is cooked through. Add a little more milk if the sauce is thicker than you would like.
  6. Stir in the frozen sweetcorn and veg and cook for another 2 minutes.
  7. Divide the chicken mixture between four ramekins. Spoon the mash on top and rough it up with a fork. Place under the grill for about 4 minutes, until golden on top. Leave to cool slightly before serving.

Variations

Chicken makes a great first meat for babies, as it's quite soft and easy to chew. Alternatively, swap the chicken for soft fish, or even tofu pieces. As your baby grows, you can substitute other kinds of meat, like pork and beef, to help introduce them to new flavours.

Another great way to introduce your baby to new flavours is by using different types of mash to top your chicken pie. Most babies love sweet potato, or why not try adding some mashed carrot or parsnip into the mix?

    Can this be frozen, does anyone know? I’m never sure if it’s ok with there being milk in the recipe. I’ve just made it now and wondering if I can freeze some!?
