If like the rest of us you've been baking up a storm since lockdown, you'll know that beloved banana bread came out on top as one of the most baked items, with every lockdown parent and their kids giving it a try.

After all, it was a pretty simple recipe that used up all those overripe bananas you never got around to eating.

But whether you loved or loathed it by the end of lockdown, this might just tickle your tastebuds once again.

Yes, this COVID classic has been given a delicious twist by a baker called Laura who shared her recipe over on her Instagram account @cakeontherun.

Made with just three ingredients, Laura's banana dough balls are easy to make - so a fun one to involve the kids in - and take just 60 seconds to cook in the microwave!

For those with allergies, they can be made gluten-free simply by using gluten-free flour, and vegan when using a dairy-free yoghurt such as soya, almond or coconut.

BANANA BREAD DOUGH BALLS. *3 ingredients *60 seconds *healthy *gluten free *vegan *quick *easy *low fat Recipe ⤵️ FYI I’m currently obsessed with this ridiculously simple recipe. Microwave cooking and oven option below. . . . . Banana bread dough balls (makes 4): Ingredients: 🍌 100g self raising flour (I use gluten free) 🍌 50g mashed banana 🍌 30g yogurt (I use vanilla soya) Method: 1️⃣ Pre-heat the oven on 180C/ 350F/ gas mark 4 (if using an oven. Skip this if using a microwave). 2️⃣ Put all of the ingredients into a bowl and stir so the mixture becomes clumpy. 3️⃣ Then use your hands to create a dough. 4️⃣ Sprinkle a bit of extra flour onto the kitchen surface and spread out the dough before cutting it into four pieces. 5️⃣ FOR MICROWAVE COOKING - roll each piece into a ball, place on a plate and microwave for 1 minute. FOR OVEN COOKING - roll each piece into a ball, place on a baking sheet and oven bake for 12 minutes. 6️⃣ Serve as they are hot (optional - roll each ball in cinnamon sugar) . . Laura's banana bread dough ball recipe

Ingredients

  • 100g self-raising flour
  • 50g mashed banana
  • 30g plain or vanilla yoghurt
  • (optional - 1 tsp ground cinnamon and 1 tbsp sugar or sweetener to roll them in after cooking)

Method:

  1. Pre-heat the oven on 180C/ 350F/ gas mark 4 (if using an oven. Skip this if using a microwave).
  2. Put all of the ingredients into a bowl and stir so the mixture becomes clumpy.

Microwave or oven bake?

No matter which way you choose to cook your banana dough balls, both will taste delicious.

If you're pressed for time, microwaving them is the quickest and easiest option, as it only takes 60 seconds, and your dough balls will be super squidgy.

If you prefer your dough balls more crispy on the outside and golden in colour, try oven baking instead.
