This puree makes a tasty introduction to spinach for babies...

Preparation

  • Total Time 38 mins

  • Cooking Time 18 mins
  • 2 tsp sunflower oil
  • 1 tbsp butter
  • 50g leeks, finely chopped
  • garlic (1x small clove), crushed
  • 150g sweet potato (peeled), chopped
  • 150g potato (peeled), chopped
  • 200ml boiling water
  • 40g fresh spinach
  • 40g frozen peas
  • 40g mature cheddar cheese, grated
  1. Heat the sunflower oil and butter in a saucepan and sauté the leeks for about 4 minutes, until softened
  2. Add the garlic and sauté for 30 seconds
  3. Add the sweet potato and potato and pour over the boiling water
  4. Cook, covered, for 9 minutes - add the spinach and peas and cook for 3 minutes
  5. Remove from the heat and stir in the grated cheddar cheese until melted
  6. Puree in a blender
  7. If necessary, you can thin the puree with a little milk

Tips

The sweetness of the potatoes helps to mask the bitterness of the spinach, helping even fussy babies get used to the taste of this super-nutritious vegetable.

Variations

Over time, gradually increase the amount of spinach in the puree, decreasing the amount of other ingredients accordingly. This will help your baby get used to the taste of spinach, and you may just find that it becomes one of their favourites!

    just noticed this version does have cheese in but the one in my book doesn't!

    my ds loves this. he's dairy free so s. ometimes hard to find different veggie recipes, for a change from meat, which don't have cheese in.
