Everyone loves sweet and sour chicken and using the slow cooker for this dish is so straightforward...

  • 400g pineapple rings in juice (1x tin)
  • 1 carrot (peeled and thinly sliced into strips)
  • 1 red pepper (deseeded and sliced into strips)
  • 1 onion (thinly sliced into rings)
  • garlic (1 clove), crushed
  • fresh ginger root (2cm piece), grated
  • 2 tbsp soft dark brown sugar
  • 1 tbsp tomato purée
  • 50ml red wine vinegar
  • 1 tbsp dark soy sauce
  • 200ml chicken stock (hot)
  • 1 tbsp plain flour
  • salt (to taste)
  • pepper (to taste)
  • 500g chicken breast (sliced into strips)
  • spring onions (to garnish)
  • sesame seeds (to garnish)
  1. Drain the pineapple, reserving the juice - chop 2 slices of the pineapple and reserve
  2. Put the sliced vegetables, crushed garlic and grated ginger in the slow cooker basin
  3. Add the pineapple juice, sugar, tomato purée, wine vinegar, soy sauce and hot chicken stock and stir well
  4. Season the flour with salt and pepper, then toss the sliced chicken breast in the flour - add it to the basin and stir in
  5. Put the lid on tightly and cook on Low for 8–10 hours until the chicken and vegetables are tender
  6. Add the reserved pineapple chunks, stir through and serve with rice or noodles, garnished with the sesame seeds and sliced spring onions

Tips

There really is nothing like using the fresh ingredients, but it's not a problem if you want to make life even easier and use a jar of sweet and sour sauce. However, the pineapple will lose its flavour, so you could add a few chunks of chopped pineapple at the end.

    Where did all her liquid go??? Like naomi there was loads left in mine. Nice easy dish tho

    Just made this. Really simple recipe and tastes lovely, but looks nothing like the photograph! There was a lot more juice than I expected, so if I made it again, I would definitely use less stock. However that aside, my two children enjoyed it, which was great as I was trying to get them to try different flavours.
