Sticky toffee apple pudding (slow cooker)

An absolutely delicious winter warmer - comfort food at its best!

  • 1 tbsp vegetable oil
  • 200g soft light brown sugar
  • 200g butter (or margarine), softened
  • 3 eggs (medium)
  • 200g self-raising flour
  • 1 tsp vanilla extract
  • 2 apples (eating apples - peeled, cored and chopped into bitesized pieces)
  • 300ml apple juice
  • 100g golden syrup
  • 100g soft light brown sugar
  • vanilla ice cream (to serve)
  1. Grease the slow cooker basin with the oil
  2. In a bowl, cream together the sugar and butter or margarine
  3. Beat the eggs and add to the creamed mixture along with the flour and vanilla extract
  4. Stir in the apple pieces, then spoon the cake mixture into the basin
  5. Smooth over to cover the base
  6. In a saucepan, heat the apple juice, golden syrup and sugar
  7. Stir until the sugar dissolves, then bring to the boil - remove from the heat
  8. Pour the toffee apple syrup over the cake mix and put the lid on tightly
  9. Cook on HIGH for 3 hours until the pudding is just springy to the touch
  10. Serve warm from the slow cooker basin with vanilla ice cream

Tips

Don’t be tempted to stir in the toffee apple syrup; it is poured over the top of the sponge mix and will seep through during cooking to make a toffee sauce at the bottom, very sticky and absolutely delicious.

    This is a fantastic recipe! The pudding was delicious! It was extremely easy to make in the morning ....and leave cooking until needed! We had a BBQ for 40 people brought out this for dessert and it went down a treat. I tripled the ingredients (I have a large slow cooker) which made enough for all who wanted it. I would question the original recipe serving four, I think they would be very large portions leaving left overs for the next day (a good thing!!!!)

    Loved it. A hit with my family. Even for my daughter of 3 who helped me to make it. I may have overdone the sauce slightly but it still came out delicious. Very happy.
