Spinach fritters for babies and toddlers

Delicious golden fritters packed with nutritious spinach

  • 1 large handful baby spinach leaves
  • 75g plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp ground nutmeg
  • 1 tbsp finely grated Parmesan or Cheddar
  • 1 large egg, beaten
  • 4-6 tbsp sunflower or vegetable oil
  1. Wilt the spinach in a pan of gently boiling water, or in a covered bowl in the microwave with a splash of water. Rinse under cold water and leave to cool.
  2. Mix the flour, baking powder, ground nutmeg, grated cheese and beaten egg in a large mixing bowl.
  3. Place the cooled spinach between two pieces of kitchen roll and pat dry - you want to remove as much liquid as possible. Gather the spinach together and roughly cut into thin ribbons.
  4. Fold the spinach ribbons into the fritter mix. Don't season if serving to babies and toddlers but, if desired, you can split into two batches and season the grown-ups' half with salt and pepper.
  5. Heat the oil in a large, heavy-bottomed frying pan over a medium-high heat. You want enough oil just to cover the fritters, so you may not need all of it.
  6. Once hot, spoon in heaped dessertspoonfuls of the batter and pat down gently into discs, 2-3 at a time so the pan doesn't become overcrowded.
  7. Fry for 2-3 minutes on each side, until golden. Remove the cooked fritters to a plate lined with kitchen paper. Repeat in batches until you have cooked all the fritters, adding more oil if necessary.
  8. Leave to cool for a few minutes before serving.

Large heavy-bottomed frying pan

Tips

These make an ideal finger food for baby-led weaning, or a tasty toddler dinner. They also work well as a snack or side dish for older kids and adults, too!

Variations

Swap the spinach for a small handful of steamed broccoli florets, or 1 small courgette or carrot (no need to precook the courgette and carrot, just grate straight into the fritter batter).

    We love these for baby-led weaning - use a few blobs of frozen spinach and defrost in the microwave
