Mediocre Mum shows you how to make a delicious 5-veg, slow-cooker version of the Italian classic, spaghetti bolognese...

  • Prep Time 10 mins
  • Cook Time 8 hrs 15 mins
  • Serves 4
  • Difficulty Level Easy

Preparation

  • Total Time 8 hrs 25 mins
  • Preparation Time 10 mins
  • Cooking Time 8 hrs 15 mins
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 450g mince
  • 1 carrot, diced
  • 1 stick of celery, diced
  • garlic (1 clove), crushed
  • 150ml boiling water + 1 Knorr Zero Salt Beef Stock cube dissolved
  • 400g tomatoes (1x tin), chopped
  • 1 tsp mixed herbs, dried
  • 1 tbsp tomato puree
  • salt (to taste)
  • pepper (to taste)
  • spagehtti (to serve)
  1. Heat the oil in a large frying pan, sauté the onion for about 3 minutes, add the mince, season with salt and pepper and brown
  2. Then add everything else, bring to a boil then transfer to slow cooker
  3. Cover and cook on Low for 6-8 hours, until the carrots are tender
  4. Cook the spaghetti according to the packet instructions - toss in a little bit of olive oil
  5. Serve with garlic bread or a side salad

Tips

Vegetarians can subsitute Quorn for the mince - just remember cooking times will be less than the meat version so adjust your cooking time accordingly. Serve sprinkled with parmesan, accompanied by garlic bread and a green salad. Perfecto!

This was delicious. Such a lovely rich flavour that the whole family enjoyed. I added a splash of hot sauce to give it a kick.

Will be making this tomorrow in a slow cooker. Perhaps less onion as will be mainly eaten by my toddler as a healthy meal. I like mine with bit more flavour, garlic etc. will probably serve with rice as easier for my daughter to eat. Cous cous could be nice too! Thanks for this recipe.
