Slow cooked sausage and onion casserole for kids

A super simple and delicious family meal...

Preparation

  • Total Time 5 hrs 10 mins

  • 1 tbsp olive oil
  • 8 sausages
  • 3 onions (in half then in thick, half moon slices), sliced
  • 2 tbsp plain flour
  • 500ml beef stock (or chicken)
  • 3 tbsp chutney (or pickle - any type)
  • 1 tbsp Worcestershire sauce
  • 1 tsp black pepper
  1. Set the slow cooker to HIGH
  2. Meanwhile, heat the oil in a frying pan, add the sausages and quickly brown on all sides, then transfer to the slow cooker
  3. Add the onions to the frying pan and cook, stirring occasionally, until soft but not brown - stir in the flour and cook gently for 1-2 minutes
  4. Make sure you scrape all the flour from the bottom of the pan
  5. Remove from the heat and gradually stir in the stock - bring to the boil, stirring continuously, until thickened
  6. Stir in the chutney, Worcestershire sauce and pepper
  7. Transfer to the slow cooker
  8. Turn the slow cooker down to LOW, put the lid on and cook on LOW for 5-8 hours
  9. Serve with vegetables and mash

Tips

Older kids can help you weigh and measure the ingredients, and even shop the onion.

This sausage casserole recipe is for a slow cooker. Serve with vegetables and a dollop of creamy mash on a cold autumn evening.

Variations

  • Adding some raw chopped vegetables under the sausages in slow cooker (peppers or root vegetables work particularly well)
  • If you don't have a slow cooker, cook in a casserole dish with lid, in the oven at 180°C/Gas mark 4 for 1-1.5 hours
  • You can also make this casserole on the hob - just cook the sausages and veg for a bit longer before adding the other ingredients, then simmer on a low heat for about half an hour.

    This is a favourite in our house for the whole family. My 3 and 1 year old girls both love it. There’s even spare left to freeze for another day.

    Just made this - following the recipe to the letter - WAY too much pepper!! Surely a pinch rather than a tsp would be better? Absolutely no chance my kids will be able to eat this :-( What a waste of food...

    We have never had a slow cooker but we saw one in morrisons and decided to buy this was the first recipe i tried, absolutely beautiful meal so easy to prepare ready for when the kids come home from school we all enjoyed it. Soooo tasty thank you.

    I have made a sausage casserole with Coleman's packet mix but had workmen here and just added mix to cold water rather than boiling help any advice I've put it in oven to at least heat the water lol

    Great family dinner for those cold nights, I have a family of four and they LOVED it! All up for seconds, I shall use my bigger slow cooker next time as the rest of the family want to try :) Great if you are a working parent, or if your out all day, you can prepare the night before and chuck it all in, in the morning before you leave. :) very happy mummy here xxx

    Made it today! Did not have Worcestershire sauce and chutney, but added 3 cloves of garlic instead! Only used 1 big onion and 6 sausages. It is a great recipe, so easy and smells great! My toddler is loving it and I will enjoy for supper later! We served with mashed potatoe and carrots. For my toddler - mashed potatoe with carrot ( she is bit funny about eating carrots but does not mind when mashed eith potato)

    Pickle is a great idea as gives a good depth of flavour - i also added a bit of cranberry sauce and some garlic.

    Great recipe and ideal as you can pop in the slow cooker and then forget about it till dinner time we all love sausages and onion and slowly cooked gives the gravy lots of lovely flavour an ideal dinner for working people

    We made this over the weekend and it was delicious. We cooked it with root veg and used "Geeta's Premium Mango Chutney" found in Tesco's with it. It was an experiment on our part purely because we had forgot to pick the chutney up during our big shop but it was delicious. It gave the dish a yummy slightly spicy kick to eat but it was overally hot as my 8 year old lapped it all up and he hates spicy food. We also added extra water to this dish just to make sure it didn't dry out because we had to cook this dish on high. With the left over sauce we added some extra veg stock to it, blitzed it and turned the left overs into a spicy veg soup (all the sausages were eaten) which again all the family loved for lunch the next day.

    I have done this recipe twice now the second time I used quorn sausage which I got on a whoopsie for £1. This was a cheap and low fat family meal. The taste is amazing, this is the nicest sausge casserole I have tased to date. Kath

    I made this last week for the first time and loved it turned out great - I used Fry light when browning the sausages. But made again tonight following same method but using Olive oil as stated and i could taste fat in the sauce. What did I do wrong?? Thanks

    I made this on friday morning before i went to visit my nan so it would be ready when i came home with the kids and WOW it was delicious im making it again today but this time made a bigger batch and added some potato so no need to make up any mash etc, will be making this again and again :)

    made this and was lovely - big hit with everyone! - for a really easy sausage casserole i use sausages and pour over a tin of oxtail soup, dice some carrot and onion and pop in in the oven covered for around 30mins - really yummy and so easy to do!!

    i did this today for sunday dinner. was delish, we all loved it apart from ds1 who all off a sudden has decided he doesnt like onions, so i told him they were pieces of garlic lol. i served it with lots of mash and veg, and the best bit was lapping up the gravy with thick pieces of bread. i used a red onion and mint chutney and it was slightly spicy but went really well in this dish, and the adults had some of the chutney on the side of the plate as well. will definately have this again!!!!!

    You can 'fry' onions and sausages in slow cooker by putting them in on high for an hour - saves mess and having to watch a frying pan in the morning.
