This cheesy flapjack recipe is great for lunchboxes and snacks...

Preparation

  • Total Time 45 mins

  • Cooking Time 40 mins
  • 2 eggs
  • 50g butter
  • 150g cheese (use less cheese or reduced fat cheese if preferred), grated
  • 150g porridge oats
  1. All you need to do is mix the ingredients and press into a greased 8 inch/20cm tin
  2. Then bake for about 30-40 minutes at 180'C/Gas mark 4 until golden brown
  3. Once it's cool, cut it into slices

You will need

8 inch/20cm tin - This one is suitable from freezer to oven and has a premium non-stick interior and exterior for easy food release and cleaning. Find at Amazon.

Variations

  • Add some grated or finely chopped veg

    love these, sometimes bit greasy if my small helper adds the cheese :-) like to add extra seeds and a pinch of paprika

    is it an egg allergy - you can buy egg substitute in the free from aisle? 2tbs ground flaxseed (also called linseed) mixed with 1 tbs water equals one egg. Or 2oz plain yoghurt mixed with 1/2 tsp oil equals 1 egg. Tofu and mashed avocado/ mashed squash will also work. Id use the flaxseed substitute as I always substitute some oats for flaxseed anyway as they are lovely in flapjacks.

    Can you use anything apart from eggs to bind them at all?

    Great idea were GF I always add a couple of tbs of psyllium husks to baking for added fibre, I might take 50g oats out use some quinoa and buckwheat flakes as well thank you for recipe :)

    OOH I made them.........HOW YUMMY. I put a full tea spoon of Bovril in instead of salt. The only problem is I'm going to have to make some more later, (and double) cause the whole lot have gone.

    Just made these and they are great. added 1/2 tsp salt and 1tsp of sugar to just season them a little and added grated carrot.

    Absolutely delicious! I melted the butter before mixing it with other ingredients. Not sure if you are supposed to, but you do in all other recipes for flapjacks. I will try to add some spices next time :).

    Made these yesterday with grated cheese and carrot. Very nice and my 13 month old liked them too. Next time I'll add a bit of seasoning though to give them an extra kick.

    This is a great recipe. Having read the comments posted to date, I added some carrots/courgettes too as well as some mustard powder and grated red onion and topped it with parmesan before baking.
