A simple, 3-step, sausage casserole recipe...

Preparation

  • 8 sausages
  • 500g sweet potato (peeled), diced
  • 1 onion, diced
  • 800g chopped tomaotes (2x tins)
  • 400g cannellini beans (1x tin), drained
  • 200g sweetcorn (1x tin)
  • fresh coriander (to server - optional)
  • sour cream (to serve - optional)
  1. Grill the sausages and chop into chunks, meanwhile peel, chop into chunks and par boil the sweet potato (for about 5 mins)
  2. Sweat the onions then add the chopped tomatoes, cannellini beans, sweetcorn, sweet potatoes and sausage chunks - bring to boil then simmer for 40 minutes
  3. Serve with fresh coriander and sour cream (optional)

Tips

This is a great recipe to make in the slow cooker, too. Instead of simmering on the hob, just chuck it all into your slow cooker and simmer for a few hours on a low heat.

    I made this last night for 3 adults and 2 children ages 8 and 9. I used 12 sausages and it just about did us all. I made it in the slow cooker so i grilled the sausages cut them into chunks and just threw everything else in and left all day to cook. We all loved it but it was definately missing something. I think this is going to be our next favourite meal! Serve with warm crusty bread to mop up the juices nom nom!! Changes - Iv wrote the recipie out and noted to add a red pepper and a tea spoon(maybe 2) or harissa paste with plenty of seasoning too. Cant wait to eat it again

    Loved the sound and look of this, and made it today for dinner. Just some thoughts: (1) It's not a slow cooker recipe, you make it on the hob. (2) I needed to add in passata, the 2 tins of tomatoes just weren't enough to provide a 'sauce' and it was a bit clumpy (3) I need everything spelled out when it comes to cooking and didn't add salt or pepper, and it needed it (I don't habitually add at the table, so I'm not a salt fiend by any means) and hubby agreed it was a bit lacking :-( so I will be adding into the leftovers for tomorrow. Thanks for sharing, will definitely make it again!

    Tasty and filling. I used frozen chopped leeks instead of onions and omitted the sweetcorn but it still worked very well. Not too time consuming either, which is always a plus!

    Making this for the first time now. I HATE cooking but love things I can chop up and chuck in slow cooker and this is great. I love this time of year as so much easier for slow cooker foods.

    Made this a few times in the slow cooker...very yummy and no way is it dry! Add more herbs and spices if you think it is tasteless :)

    We had this today, I added garlic, herbs and baked beans and we ate it with crusty bread. Was a big hit here, the kids all said it was yummy and my husband and I loved it. Ours wasn't dry at all. Will definitely be making again.

    I've just made this but with normal potatos and baked beans n added cheese and got to say its lovely, not dry at all with the juice from beans n the melted cheese, also used frozen mixed veg instead of just sweetcorn.... And my 3 yr old who doesn't usually eat has almost cleared her plate :D

    We added some garam masala, paprika, bit of chilli, baked beans instead of plain beans, a sprinkle of sugar, water from a swished out can of tomatoes and then put it in a casorole dish in the oven at 180 for 30 mins. This gives it a sweeter, curried taste and not so bland. We also used Cumberland sausage and it tasted lovely.

    Me and my partner really disliked this meal, very dry, tasteless and the ingredients really didn't go well together. The nicest part of the meal was the bread and butter i filled myself up on instead of finishing!

    My 6 year old wasn't too enthusiastic about this, she ate the sausages, but little else. I think it had too much sweet potato in it, seemed an awful lot and was a bit dry. Will try it again with ordinary poteto and baked beans, see if she likes it then.

    Great, easy recipe. My little one has just decided he likes sweet potato so this is great. I only had plainer flavoured sausages in the freezer (but will try with toulouse next) and so added a generous sprinkling of smoked paprika to give it an edge - both little ones enjoyed as well as the adults!

    Hubby was v enthusiastic about this which makes a nice change, and it was Father's day. We only had half the sweet potatoes, so used 4 extra sausages instead which went down a treat. Will make again and do the same. You could use 2 different types of vege sausages. We had it with mashed potato also.

    This is a great midweek recipe for nights when my wee one has to go out to his clubs. Great to leave in fridge for hubby! I've done this with various beans I've found at the back of the cupboard.

    Delicious. I varied it slightly and made it into a one pot dish by frying sausages and onion in pan together, then adding tomatoes and some stock with the sweet potatoes, then all the pulses towards the end. Needed pepper and some extra herbs as would be a bit bland otherwise, and if not making for kids, a bit of chilli might be nice. Thinking of doing variations of this with different types of sausages and pulses - a real winner at around a pound per portion!

    Sorry, I was focusing more on trying to simplify the recipe enough for it to cost under a fiver. When we make it ourselves, we add herbs such as rosemary and thyme, some minced garlic and red wine (once cooked out it is ok for the kids to eat). It's hard to put a price on the amounts of those kind of ingredients used so I kept to the bare minimum - also the toulouse sausages have red wine, herbs and garlic in them already so that's why I specified those sausages - they add more flavour to the casserole. Glad to see most enjoyed the recipe though :-) Tanya aka Letanya!

    Had this for tea tonight - It was alright, nothing special. Nobody passed comment either way so I guess I would do it again. I've blitzed the rest for a soup tomorrow for lunch so I'll see how that goes down.

    My 14 month old and 3 year old really enjoyed this. After they had their portions, we added a dash of chilli and red wine (as previously suggested) and it was a big hit with me and my husband too. Will definately do it again.

    We all enjoyed this very much, including our 2 boys, 18 months & 3 years. I added some smoked paprika, tomato puree and some chicken stock as previously suggested. Would recommend this winter warmer!

    My family (8 yr old twins and 4 yr old) loved this! They even went back for seconds. There was lots of the veggies leftover so added cup of chicken stock and blitzed in the food processor for soup lunch the following day!

    So easy to make and very tasty. Me and husband had it last night and I have cut it up for my 3 year old today and blended it up a bit more for my twin girls aged 1 for lunch today. We all loved it and it was very cheap. I got a big bag of Hammonds skinless sausages for £1 from Farm Foods which made it even cheaper. Yum!
