A cheap veggie meal; make as part of curry night & enjoy a homemade takeaway...

Preparation

  • Total Time 40 mins

  • Cooking Time 30 mins
  • 2 tbsp olive oil
  • 1 onion, chopped
  • garlic (1x clove), crushed
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 150g red lentils (rinsed)
  • ½ tsp chilli powder
  • 600ml vegetable stock
  1. Heat the oil in a large saucepan and fry the onions until brown and soft
  2. Add garlic and spices and stir
  3. Add the lentils and 3/4 of the stock and bring to the boil
  4. Simmer for 30 minutes or until lentils are cooked and swollen
  5. Add the rest of the stock if necessary
  6. Pile into bowls
  7. Serve this with plenty of naan bread

You will need

Variations

Add any vegetables you fancy such as carrots or cauliflower. Spinach and frozen peas also work well when added a few minutes before you finish cooking.

    so easy to make, we all really liked this, even my 2 year old who has it with basmati rice. added chicken for others to bulk it out. tastes even better after a day in the fridge. I use a Bhuna curry paste, but only teaspoon

    Lovely and simple recipe, which allows for many variations, as others have posted. My favourite is to add plenty of black pepper and a generous slice from a block of creamed coconut towards the end and let it melt into the lentils.

    Love this Recipe and make it often. I double up the recipe and use half red and green lentils. The Green lentils give it more texture. I sometimes add chickpeas too. You can add any veggies you have lying around. We especially like Grated carrot, red pepper, fresh or frozen spinach and some butternut squash or sweet potato.

    I've made this recepy but instead of lentils I've used a tin of chickpeas and I grated a courgette in it and also added a bit of passata... Delicious, cheap and easy :-)

    Just cooked this for my family, as we are following the budget meal planner. Didn't really like the sound of with but my meat eating hubby, 4 and 6 year old all said it was a fantastic meal and I loved it too! I added some left over passata, red pepper and carrots and could have addedd more. A real surprise.

    Great recipe - especially as it just uses dried ingredients (except the onion and garlic but you usually have those in the cupboard too). Healthy, tasty and cheap! Dried lentils are fine, if you use tinned it won't take as long.

    I loved this!! Doubled up on the quantities and added more curry and chilli to it once served kids as it wasnt hot enough for us also added a few balls of frozen spinach. This is a great quick and cheap meal :D Thank you for posting x

    A very easy and lovely curry (I add in chick peas like someone suggested below). Made recently for my mother-in law who is veggie, it went down a treat with some chapatti's and rice.

    Thank you for this recipe. I have always loved lentils when cooked by someone else but been a bit uncertain how to handle them when cooking myself. I tried it and loved it - had it for hangover food one morning! Sounds weird but it worked - it tastes wonderful after being allowed to 'sit' for a few hours. Second time I cooked it I gave it to my 11 month old thinking she'd spit it out - and she absolutely loved it. I boiled some small potatoes separately and then added them at the end - this bulked the dish out. Delicious

    I made this & have to say it is so quick, cheap & tasty It was definatly a hit in our house!!! I think it makes a basic sauce that you can then adapt & add what ever you want. I added mushrooms & chicken, so had a chicken & mushroom curry, served with boiled brown rice it was certainly very filling! Thanks for the recipe :)

    I love curries, but I'm afraid this did not do it for me. I used curry paste, cumin etc so the taste and strength was there, but it needs bulking up somehow, maybe some chunky veg. It was like eating baby food.

    I would recommend this one. We tried this last night and it was really yummy, not a scrap remained on our plates! We added celery as someone else suggested and next time I will try adding green beans or spinach. We used mild curry powder and it was fine or our toddler.

    I made this last night and it was LOVELY! Really warming and filling, especially when you have a cold or feel a bit under the weather! My housemates were very jealous! Highly recommend!     I've made this a couple of times now and I really like it, so do the rest of the family. It's very simple to make and cheap. It's even better if you add some fresh spinach leaves in the last few minutes of cooking, and allow the heat of the curry to wilt the leaves.

    I'm really sorry to say that this wasnt a massive hit in our house :( The kids hardly touched it but I thought it was ok. Have to say, I made one with hot curry powder for DH and one with mild for the kids and the mild one was actually nicer. Thought it more suited to lunch.

    Lovely! Only thing was my DD aged 2 found it too spicy, so next time I will do hers then do ours with the spices in it. She liked dipping wholemeal pitta in it though and I added boiled egg to it, which she ate. Me and my partner loved it and will make it again. It's so easy and yummy.

    I thought initially there were too few ingredients to make this tasty, how wrong was I! It is so yummy, I made it yesterday and have eaten the rest tonight too! I did add alot more curry powder and chilli as I'm used to madras hot curry and I added spinach too as previously suggested. What a fantastic low fat easy recipe, thanks to whoever sent it in!

    I tried this last night and it was lovely. I added some veg to it too. I think if I added pineapple it would be very much like a dhansak ( my usual from the take-a-way menu). I can see myself making it quite often....... yummy !

    I just made this tonight but missed out the chilli powder as I was giving it to my 14 month DD. It was still lovely and filling and DD seemed to enjoy it too. Will be making it again without a doubt! :D

    i made this but replaced the lentils with risoto rice and added half a lamb oxo stock cube and i ate it with fried dumplings lol weird combo bit im pregnant so my excuse. i thought it was very nice and will be feeding it my lil man tomorrow

    Lentils are a wonderful cheap resource and you can easily add lots of flavour. I like to add fresh or frozen leaf spinach a few minutes before the end of cooking time and garnish with sliced hard-boiled egg and/or some toasted almonds. But you can add any veg, either chopped and cooked with the curry at the start, or leftovers added near the end to warm up.

    I am the world's worst cook, and I thought I'd go for this as it looked simple.....however I was feeling in an adventurous mood and wanted to pad it out a bit so it'd go a bit further. I added some frozen veg (carrots, peas, brocolli and sweetcorn) about 5 minutes after the lentils. I thought I should add more water. But this was a mistake and it ended up being rather watery. So I took a blender to it and made it into a soup and IT'S GORGEOUS!!! If I hadn't added the extra water it would have been fine and made a really lovely curry. It's very tasty!
