I made these mini quiches with my kids today and to my amazement they ate them!

Preparation

  • Total Time 40 mins

  • Cooking Time 20 mins
  • 1 shortcrust pastry (packet)
  • 2 eggs
  • 150ml milk
  • 50g cheddar cheese, grated
  • 1 tsp herbs
  1. Grease a muffin tray or bun tin
  2. Get the children to help roll the pastry out until quite thin
  3. Cut out 10 cm/4" circles (you could use a saucer) for lining a muffin tin or use a cookie cutter for a bun tin
  4. Then line the tray with the pastry circles - re-roll any scraps to make more circles if needed
  5. Beat the eggs and milk together in a jug, add the herbs and pepper (if liked)
  6. Get the children to put a bit of grated cheese in the bottom on each pastry case, then get them to add the fillings to each pie
  7. Pour on the egg/milk mixture until it nearly reaches the top of the pastry
  8. Bake at 180'C/Gas mark 4 for 15-25 minutes until lightly browned
  9. These can be served hot or cold (good in lunchboxes) and can be frozen
  10. Other suggestions for fillings: chopped tomatoes, finely sliced leeks, flakes of tinned tuna, chopped spring onions

  • Fill it with whatever your children enjoy! Here are a few suggestions: tinned sweetcorn, chopped peppers, chopped cooked meat (ham, salami, chicken etc.) chopped mushrooms, frozen peas

    These are great and so easy to make! My baby is 11 1/2 months and he absolutely loves these. They are great to take out with you as well :)

    I make little muffin pizzas for my daughters pack lunch, using a muffin cut in half a place slices of tomatoe,chopped pepper,sweetcorn and if you like a few slices of pepperoni then a slice of cheese to cover then put under the grill until the cheese melts. They love them

    adrienne, it looks like it makes at least 10 but more if you roll out the scraps. but will depend on how think you roll the pastry x

    I mixed some chopped cooked spinach into the egg mixture andf put crumbled feta into the bottom of the pastry cases...yum!

    I have just made these with my two children (6 & 3) and they are perfect. really easy to make. simple ingredients. i used chicken and bacon and the kids love them. i will be making these with the children at pre school soon.

    Can't believe how professional these look! I used some mixed tinned veg for quickness. Good tip about not filling the case with the egg mix.

    This is my first attempt at a recipe from Netmums and what a success !! I am now making a second batch to freeze for our Easter picnic mmm mmm. I made the first batch with my daughter who came up with the idea of adding a squirt of tomato sauce into each one before the egg mixture and it was delicious :-)

    When the mood hits your eye like a big pizza pie thats lovely. These are gorge, son wasn'tconvinced but at least I will eat them.

    i made these and put chicken,sweetcorn and beans!sounds like a weird combination but thought it would be to dry with just the first two ingrediant.tasted great!will def make them again.have not got kids yet so made them 4 myself!
