Make simple fudge cheesecake with cream cheese, cream and fudge - we have used Orkney fudge here

For the base
- 200g digestive biscuits
- 75g butter, melted
For the filling
- 200g cream cheese
- 600ml double cream
- 200g Orkney Fudge (or tablet), grated
For the base
- Crush the digestive biscuits (pop in a carrier bag and whack with a rolling pin) and add to the melted butter
- Press this mixture into a well greased spring form cake tin 17inch round
- Beat the double cream until it goes soft and starts to stiffen
- Add the grated fudge (keeping some back to decorate the top) and then gently fold in the cream cheese
- Spoon on top of the biscuit base and put in the fridge overnight (or at least 4 hours)
- Garnish with the remaining fudge before serving

Tips
This is a really popular type of cheesecake and if you can't get Orkney fudge you could use any tablet type of fudge that you can grate - chewy types won't really work.

Where I live in Scotland you can get it in Tescos but if you are in England you might have to get it mail order. Any kind of tablet style fudge will work - as long as you can grate it
