Preparation

  • 100g unsalted butter
  • 200g light brown sugar
  • 1 egg
  • Dash vanilla extract
  • 200g self-raising flour, sifted
  • Pinch salt
  1. Pre-heat the oven to 180C and prepare a couple of large baking trays, lining them with baking paper.
  2. Cream the butter and sugar together, using a wooden spoon, or electric mixer, until light and fluffy. Slowly beat in the egg, then the vanilla extract.
  3. Mix together the flour and the salt, the slowly incorporate into the creamed butter and sugar mixture, using a folding technique. When fully incorporated, bring together to make a ball of dough.
  4. Divide the dough into 20 small, or 10 large balls, place on the baking on the tray, leaving lots of space for them to spread out into cookies. Pop into the oven for about 10 minutes, until golden and cooked through.
  5. Place on a wire rack to cool. If you want to decorate with frosting, leave to cool fully. Store in an airtight container for up to 5 days.
