Turn a marrow glut into this delicious loaf cake

  • 160ml vegetable oil
  • 180g soft brown sugar
  • 3 medium eggs
  • 1 tsp vanilla extract
  • 175g self-raising flour
  • 175g wholegrain spelt or rye flour
  • 2 tsp baking powder
  • 1 tsp ground mixed spice
  • 1 1/2 tsp ground cinnamon
  • 350g marrow or courgette, coarsely grated
  • 100g sultanas
  • 50g walnuts, roughly chopped
  1. Preheat the oven to 180°C/160°C fan/Gas Mark 4. Grease and line a 2lb loaf tin with baking paper.
  2. Beat the oil and sugar together using an electric mixer for 2-3 minutes, until well combined.
  3. Whisk the eggs and vanilla together in a separate jug.
  4. Sift together the flours, baking powder, cinnamon and mixed spice in a separate bowl.
  5. Slowly pour the egg mixture into the oil and sugar a bit at a time, alternating with a spoonful of the flour mixture. Once you've added all the egg, fold in the rest of the flour mixture.
  6. Add the grated marrow and stir well to combine, then fold in the sultanas and chopped walnuts.
  7. Spoon the cake batter into your loaf tin and smooth the top. Bake for 45-60 minutes, or until golden brown on top and a toothpick inserted into the middle comes out clean.
  8. Leave to cool for 5 minutes in the tin before turning out onto a wire rack to cool completely.

Tips

Did you know a marrow is a large courgette that has been left on the plant to grow for longer? If you've been growing courgettes this summer, our marrow loaf cake recipe is a perfect way to use up some of your home-grown veggies big or small. This recipe works with the same weight of courgettes as marrow. 

Variations

Replace 5tbsp of the wholegrain flour with cocoa powder to make a chocolate and marrow loaf cake. 

Use a mixture of half grated carrot and half grated marrow/courgette.

    Made this in an attempt to get dd to eat some veg, and she loved it! I thought it was pretty tasty too, tbh - you'd never know it's made with marrow
