Turn a marrow glut into this delicious loaf cake

- 160ml vegetable oil
- 180g soft brown sugar
- 3 medium eggs
- 1 tsp vanilla extract
- 175g self-raising flour
- 175g wholegrain spelt or rye flour
- 2 tsp baking powder
- 1 tsp ground mixed spice
- 1 1/2 tsp ground cinnamon
- 350g marrow or courgette, coarsely grated
- 100g sultanas
- 50g walnuts, roughly chopped
- Preheat the oven to 180°C/160°C fan/Gas Mark 4. Grease and line a 2lb loaf tin with baking paper.
- Beat the oil and sugar together using an electric mixer for 2-3 minutes, until well combined.
- Whisk the eggs and vanilla together in a separate jug.
- Sift together the flours, baking powder, cinnamon and mixed spice in a separate bowl.
- Slowly pour the egg mixture into the oil and sugar a bit at a time, alternating with a spoonful of the flour mixture. Once you've added all the egg, fold in the rest of the flour mixture.
- Add the grated marrow and stir well to combine, then fold in the sultanas and chopped walnuts.
- Spoon the cake batter into your loaf tin and smooth the top. Bake for 45-60 minutes, or until golden brown on top and a toothpick inserted into the middle comes out clean.
- Leave to cool for 5 minutes in the tin before turning out onto a wire rack to cool completely.

Variations
Replace 5tbsp of the wholegrain flour with cocoa powder to make a chocolate and marrow loaf cake.
Use a mixture of half grated carrot and half grated marrow/courgette.
