A super easy, budget-friendly meal, ideal for toddlers and big kids alike...

Preparation

  • Total Time 40 mins

  • 250g macaroni
  • 1 tbsp butter
  • 1 tbsp plain flour
  • 450ml milk
  • cheddar cheese, grated
  • 1 tsp black pepper
  • 1 tsp mustard powder
  1. Cook the macaroni according to the packet instructions and drain when cooked
  2. Heat the butter (or margarine) and when melted, add a generous tablespoon of plain flour and mix it in
  3. Add some black pepper and a little nutmeg or mustard powder - cook on a low heat, stirring all the time, for about 30-60 seconds
  4. Add the milk a little at a time and mix well with a whisk - you should end up using about 450ml of milk
  5. Bring to the boil, stirring all the time, to thicken the sauce, then add a big handful of grated cheddar cheese to make it a cheese sauce
  6. Add the drained pasta to the cheese sauce and stir well
  7. Serve straight away or put into an oven proof dish, grate some more cheese over and bake at 180'C/Gas mark 5 for 10 minutes

Tips

This tasty meal is quick and cheap to make and there are plenty of variations to suit different tastes. 

Older kids can hep with grating the cheese, and even toddlers will love sprinkling cheese on top.

Variations

  • Adding some vegetables (broccoli, cauliflower, sweetcorn, carrots etc) to the pan of pasta, a few minutes before it is cooked
  • Or cooked sliced leeks and chopped up bacon give it a great twist

    I am always cooking loads of different dishes but for some unknown reason I have never attempted to make macaroni cheese before but this recipe was so easy and my 10 & 12 year olds loved it, as did my 33 week bump judging by the squirming going on. Great dish, will make again. Only thing I changed was I added smoked paprika instead of nutmeg or mustard.

    Fantastic recipe I use this all the time. I do use about 180g of strong cheddar cheese and a few slices of thick ham and add it after the cheese. Also done with peas too!! Goes down a treat with my girl.

    This is a great basic recipe which I made with my 5 year old daughter who loves cooking. We added our own touches by frying an onion with some bacon which we stirred through the pasta before sprinkling on lots more cheese and baking. We also mixed gruyere and parmesan in with the cheddar - it was delicious.

    Made this for me and my little boy for lunch. Wow it sure makes a hell of a lot :/ lol Hoping i can freeze it for another day. Ive never been a huge fan of cheese sauce but this is lovely! I added sweetcorn too. I think i'll half everything next time though lol!

    i made this tonight with about 300g of macaroni and it was far too much (me, hubby who ate 2nds and almost 3 year old dd - theres enough for my hubby for lunch tomorrow) i used 250g cheddar and added chopped chestnut mushrooms and gammon chunks chopped up - i also added parmesan and bread crumb topping it was really nice.

    Hi Ann...we'd estimate that the sauce is enough for 250g of macaroni. With two younger lads, we cook a 500g bag of macaroni and if we manage not to give in to seconds, there's a portion left over for the next day. We do that topping too, without the bacon, Linda!

    Jamie Oliver does a nice topping.... Bread crumbs blitzed with a couple of rashers of streaky bacon and a bit of fresh rosemary.. Makes a nice addition by giving crunch & extra flavour x

    This is one of my favourite comfort foods, but I ALWAYS ALWAYS end up burning it and then need a chisel to get it off the bottom of the pan. But the kids always enjoy the not so burnt bits.

    I made tbis yesterday for today's tea when I got home from work but added half a pack of Tesco's cooking bacon diced up and three sliced leeks. Add only half of the cheese sauce to the mix and the other half over the top before cooking with more cheese on top. It was fab!!!!!

    I find adding the milk slowly and whisking it takes too much time and hurts my arm. To save time and effort I just add all the milk to the butter/margarine and flour mixture then blend with a hand blender. I then return it to the heat to cook out the floury taste and add the cheese. You get a really smooth sauce!

    WE love this recipe we add a tsp of mustard powder to the sauce to add a little kick and depending on whats in the veg rack or fridge we alternate the combos somtimes is bacon and leeks sometimes its mixed seasonal veg it always goes down well

    If you use proper flour you need to cook for a lttle bit longer or you get the floury taste. My mum old me th flour has to cook

    After you add the flour you should really cook the butter and flour mix for about 2 mins - until little bubbles come out. This stops the sauce having a floury taste. Another idea is to grate breadcrumbs for the topping and then put the cheese on so that it gives it a bit of crunch. (This is when you are baking it off I mean) I always grate my crusts up and add a bit of cheese before putting it in the freezer as a ready-to-go topping for my macaroni cheeses or pasta dishes!

    Hi - we put pureed cauliflour and/or zucchini in it so kids dont know it is there. Also you can add tinned red salmon to it and a bit of paremsen as well as cheddar. So many variations. Have had it with tuna, boiled egg cut up as well.
