These fluffy and zesty lemon pancakes, made with self-raising flour, make the perfect treat for celebrating Shrove Tuesday. Serve with berries, yoghurt and a dusting of icing sugar to make them extra special.

Preparation

  • 100g self-raising flour, sifted
  • 60g caster sugar
  • 1 medium egg
  • 150ml milk
  • Oil or butter, for frying
  • 1/2 cup lemon juice
  • 2 tbsp lemon zest
  • Dusting of icing sugar (for decoration)
  1. Mix the sifted flour and caster sugar in a bowl or jug
  2. Add the egg and milk and beat well, until you have a smooth batter
  3. Heat a drop of oil or butter in a frying pan - when the pan is really hot, pour in about 3 tablespoons of batter
  4. Cook for just under a minute - using a spatula to keep an eye on how it's cooking and turn to the other side once the first is cooked
  5. Sprinkle over icing sugar and lemon juice, followed by a light dusting of lemon zest. Then serve and enjoy

Tips

Serve these lemon pancakes with a dollop of natural yoghurt, chopped banana, and a hanful of berries (blueberries, strawberries and raspberries all make lovely toppings).

The zingy lemon and fresh berries also give these delicious pancakes a bright and sunny flavour, making them a perfect treat not only for Shrove Tuesday, but also for all throughout the summer. 

The self-raising flour in these pancakes gives them a light and fluffy texture, making them great for special breakfasts and quick toastable snacks (simply pop in the toaster or under the grill and spread a little butter on top). 

 

Variations

Add cinnamon to the batter for lemon and cinnamon pancakes.

Intsead of natural yoghurt, you could also serve with creme fraiche, whipped (or squirty) cream, or a scoop of vanilla ice cream.

For extra sweetness, serve with a fruity raspberry sauce, berry compote or even a spoonful of microwave raspberry or strawberry jam.
