Easy fluffy American pancakes made without baking powder

  • 100g self-raising flour, sifted
  • 60g caster sugar
  • 1 medium egg
  • 150ml milk
  • Oil or butter (for frying)
  1. Sift the self-raising flour into a bowl and stir in the sugar
  2. Beat the egg into the mixture until you get a light and fluffy mixture
  3. Slowly pour in the milk and stir until you get a smooth and runny batter
  4. Heat a little oil in a frying pan until hot. Spoon in about 3 tablespoons of batter
  5. Fry for around a minute, using a spatula to stop the edges from sticking to the pan. When the bottom of the pancake is a golden brown, flip the pancake to cook the other side
  6. Remove your pancake from the heat once both sides are golden brown and it's cooked the whole way through. Repeat with the rest of the batter
