Try this traditional goulash recipe...

  • 1 onion, chopped
  • 1 pepper (red or green), sliced
  • garlic puree
  • 2 tsp paprika
  • 1 tsp cayenne (optional)
  • 3 carrots, sliced
  • 400g diced beef (or use raw beef chunks)
  • 400g chopped tomatoes
  • 2 tbsp plain flour
  • 2 tbsp tomato puree
  • 500ml beef stock
  • 2 tbsp natural yoghurt (or soured cream)
  • fresh parsley
  • 2 tbsp oil
  1. Preheat oven to 170'C/Gas mark 3
  2. Fry the onion in about 2 tbsp of oil for 5 minutes
  3. Add the red or green pepper (or both) and cook for 2 minutes
  4. Add 2 good squirts of garlic puree, 2 tsp of paprika, 1 tsp cayenne pepper and mix
  5. Add the carrots and take off the heat (sometimes I add 1-2 potatoes)
  6. Meanwhile, put the diced beef diced in the bottom of a casserole dish (or slow cooker) and sprinkle with 2 tbsp of flour
  7. Add the can of chopped tomatoes, tomato puree and 500ml of beef stock and stir well
  8. Add all the other ingredients from the pan and mix together
  9. Put in the oven for about 1 1/2 hours (or 8 hours in the slow cooker) checking on it and stirring it from time to time
  10. When you take it out, mix in 2 tbsp of natural yoghurt or soured cream, and fresh parsley and serve with rice and crusty bread

Tips

Why not buy a large beef joint for your Sunday dinner and use the leftovers to make goulash on Monday?

If using raw beef, coat in the flour and brown for a couple of minutes before adding to the casserole or slow cooker.

Variations

  • For a less spicy version, leave out the cayenne if serving to young children

    With a slow cooker when you are cooking the food for 8 hours do you put on the low medium or high setting?

    Made both the meat and vegetable versions of this yesterday - the meat in the slow cooker and the vegetable one in the oven. Both the meat eaters and our vegetarian daughter loved loved the meal. Will definately be making it again.

    I agree with Alena that this is far from a real Goulash, the real Gulyas is onions, garlic, paprika powder, few tomatoes,diced beef and potatoes. The beauty of making a good gulyas (goulash) is to fry the onions slowly and as long as possible before adding the paprika powder (and a bit of hot paprika powder if you like). Then add the beef and add a bit of water until it's nearly under water. This dish takes about 3 hours. The longer it takes, the better the taste will be! Only in the last half an hour add the sliced potatoes. Jo etvagyat everyone!!!!

    I made this with yesterdays fathers day beef, I didnt have the right spices - I used a little cajun and some herbs, and at the end I stirred in the yoghurt - my fussy kids and I wolfed it down.... fantastic!

    MMMMMMM.... another netmums success! Very tasty! Needed a bit of thickening at the end so would put in less stock next time but lovely flavour and a lovely alternative to a standard casserole. We enjoyed it with mashed potato - ideal sunday night supper! Thanks for sharing!

    This was absolutely delicious! I started to prepare it at 8am as it was going in the slow cooker - I went to grab the chopped tomatoes and horror - there were none left! At 8am and rushing round for work I wasn't going to go off to the shops so I threw in a 500ml box of passata and wondered if it would be as nice...... crikey - it was lovely!     Great recipe, simple ingredients, delicious. Pleased my usually fussy 6 and 3 yr olds. Left out cayenne pepper for them, but added it the next time I cooked it for friends. Great with brown rice and garlic ciabatta.

    You don't have to brown the meat first,and I never do! though some people prefer too coating it in flour will help thicken any sauce / juices ,as it cooks

    I am puzzled to find a slow cooker recipe that starts with cooked beef. Isn't part of the beauty of slow cooking how the cheap cuts of meat improve with long, slow cooking?
