Golden syrup microwave mug cake

Preparation

- 5 tbsp self-raising flour
- 2 tbsp caster sugar
- 1 medium egg
- 3 tbsp milk
- 3 tbsp vegetable oil (or sunflower oil)
- 1 tbsp golden syrup (plus extra for serving)
- squirty cream (to serve)
- Use the largest mug you can find to avoid making a mess (maybe even two mugs)
- Add the flour and sugar in the mug and mix
- Add the egg, milk and oil - mix
- Add golden syrup to the top of the mixture – don’t stir it, it should sink through the sponge as it cooks
- Centre your mug in the middle of the microwave and cook on high for 3 minutes (depending how powerful your microwave is) or until it has stopped rising and is firm to the touch
- Allow to cool for a couple of minutes, then serve with a big dollop of squirty cream

Variations
This is such a warm and delicious comfort food, perfect for whipping together on a cold winter night. If you want to get really decadent, you could try adding some fudge chunks – the treacle pudding equivalent of chocolate chips – into the sponge too.
If you're low on vegetable oil, olive oil works just as well. Just be mindful that you will be able to taste it in the cake, which your kids may not like if they're not used to savoury flavours in sweet foods just yet.

Not going to lie, mine wasn't quite as pretty as the picture, and echo PP's sentiments about washing up - but it's a delish treat when you cba with anything more complicated.

Made this morning. Very filling and tasty. The syrup goes straight to the bottom to make a lovely topping when you turn it upside down. Only downside is the bits that stick to the cup are a bugger to get off, definitely needs a soak.

Followed the instructions fully. The cake wasn't fluffy at all it was chewy and eggy. I used the biggest mugs I could find, but even they seemed too small. The syrup didn't stay on top before cooking and the mugs are a nightmare to wash after... Disaster
