For the cake
- 380g plain flour
- 2 tsp baking powder
- 1.5 tsp salt
- 330ml milk
- 1.5 tsp vanilla extract
- 225g butter
- 400g caster sugar
- 4 eggs, beaten
For the chocolate topping
- 5 tbsp unsalted butter
- 115g chocolate chips
- 280g icing sugar
- 1.5 vanilla extract
- 60ml hot water
- hundreds and thousands (to decorate)
- Preheat oven to 180'C/Gas mark 4
- To make the cake, over a sheet of waxed paper, sift together the flour, baking powder and salt
- In a small bowl, combine the milk and vanilla - set aside
- In the bowl of an electric mixer fitted with the flat beater, beat the butter on medium speed until creamy and smooth, about 30 seconds
- Add the caster sugar and continue beating until light and fluffy (about 5 minutes) stopping the mixer occasionally to scrape down the sides of the bowl
- Add the eggs a little at a time, beating well after each addition
- Reduce the speed to low and add the flour mixture in three additions, alternating with the milk mixture and beginning and ending with the flour
- Beat each addition until just incorporated, stopping the mixer occasionally to scrape down the sides of the bowl
- Divide the batter evenly between the prepared giant doughnut cake tin and tap the pans on the countertop to remove any bubbles
- Spread the batter up the sides of each pan so the sides are higher than the centre
- Bake on the lower shelf of the preheat oven for approximately 40-45 minutes, until the cake begins to pull away from the sides of the pans and a toothpick inserted into the centre comes out clean
- Transfer the pans to a wire rack and let the cakes cool in the pans for at least 15 minutes
- Once cooled, carefully turn the cakes out onto the wire and leave to cool completely for approximately two hours
- Once both halves have completely cooled, return them to the cake pans and level them with a serrated knife so they fit together neatly
- Now remove from the pans and fit them together to make the giant doughnut
- Ready to glaze!
- Over a gentle heat, melt the butter and chocolate chips in a pan
- Whisk in the icing sugar, vanilla extract and hot water until combined
- Pour the topping over the cake all at once in one layer and immediately decorate with hundreds and thousands
- Let the topping set for 15 minutes before slicing and serving

Tips
Before you start, make sure all the ingredients (except the hot water) are at room temperature
Variations
Instead of a chocolate topping, you could use brightly-coloured icing.
Why not get the kids involved? Lay out small bowls filled with colourful sweets and let them decorate the finished cake however they like.

Hi, I have bought the silicone rings as recommended in the recipe. In the method you mention " In the prepared rings" do I have to grease them? Thanks in advance, I'm dying to try the recipe, just don't want to mess it up as I'm not used to baking in silicone.

The cake looks great, but you do not need to add salt to a cake mixture these days!
