A delicious, mild, fruity curry - perfect for toddlers...

Preparation

  • 1.5 tbsp sunflower oil
  • 1 medium onion, finely chopped
  • ½ red pepper
  • 1 apple (small to medium size - peeled and finely sliced)
  • 2 chicken breasts (into 2cm cubes), sliced
  • 1.5 tbsp korma curry paste
  • 1 tsp garam masala
  • 100ml low-fat coconut milk
  • 100ml chicken stock
  • 1.5 tbsp mango chutney
  • 1 tbsp soy sauce
  • 6 baby corn (on the diagonal), sliced
  • 50g frozen peas
  • 2 tsp lime juice
  • 1 tsp cornflour
  1. Heat the oil in a deep-frying pan or wok
  2. Add the onion and red pepper and stir-fry for 3 minutes
  3. Next, add the apple slices and sauté for 2 minutes
  4. Add the chicken and stir-fry until sealed
  5. Add the curry paste and garam masala, then the coconut milk, stock, mango chutney, soy sauce and baby corn
  6. Bring to the boil and simmer for 3 minutes
  7. Add the peas and lime juice and cook for 2-3 minutes
  8. Mix the cornflour with 2 tbsp of cold water
  9. Add to the curry and stir until slightly thickened
  10. Serve with rice

Tips

This recipe makes four toddler portions. You can freeze any unused portions in small pots for another day.

    I am not entirely sure what I did wrong but this wasn't as good as I'd hoped. My kids didn't eat it either, but that could be because of the fruit - they're not used to it, so I will try it again & see if its more successful.

    Tried this for me, OH, mother and 2 year old, was wondering how it would turn out but it was beautiful! even a 2 year old fussy with chicken ate it!
