A quick and simple recipe for flapjacks/cereal bars - great for lunchboxes...

Preparation

  • 50g prunes (chopped), dried
  • 50g apricots (chopped), dried
  • 50g raisins
  • 175g porridge oats
  • 50g butter
  • 3 tbsp syrup
  • 1 egg, beaten
  1. Preheat the oven to gas mark 4/180'C/Fan oven 170'C
  2. Lightly grease a small shallow baking tin
  3. Chop the prunes and apricots into small pieces - put the prunes, apricots, raisins or sultanas and oats into a mixing bowl and stir until evenly mixed
  4. In a small saucepan melt the butter with the syrup (or honey) and then add to the fruit and oats, and mix well
  5. Beat the egg and when the fruit and oat mixture has cooled slightly, add this to the mixture
  6. Turn the mixture into the greased tin and level the surface
  7. Bake for 15-20 minutes until a pale golden brown
  8. Leave in the tin until almost cold and then score into fingers with a sharp knife, and loosen around the edges
  9. Remove from the tin to finish cooling on a wire rack
  10. Can be stored in an airtight container for up to a week and are suitable for freezing

Tips

Use clear honey instead of syrup to be healthier!

Variations

You can add any combination of fruits, nuts and seeds, or make it naughty by adding some extra sweet treats. Ideas include:

Fruits: sultanas, currants, dried apple, banana chips, coconut flakes, sweetened dried cranberries, goji berries, dried cherries, lemon juice, freeze-dried strawberries or raspberries

Nuts: walnuts, hazelnuts, almonds, pistachios, pecan nuts, macadamia nuts

Seeds: flaxseeds, poppy seeds, pumpkin seeds, sunflower seeds, sesame seeds, chia seeds

Naughty bits: chocolate chips, marshmallows, crushed chocolate bars, salted caramel, crushed pretzels,

    I'd run out of dried fruit so we added 150g of fruity granola instead, it was delicious. Really easy recipe too so the kids can help out.

    This is honestly the best flapjack recipe we've found. Using honey instead of syrup makes this a really healthy snack and we now make these every fortnight with different fruit combinations. Our favourite so far is apricots, sultanas and cranberrys. Great to have in the cupboard for all those 'Mummy, I'm hungry' moments. Thanks

    It is just out of the oven and I am desperate to try some! I like the fact that this recipe hasn't got sugar in it, as a lot of the flapjack recipes are loaded with sugar. Smells good!

    Ooh these are lovely! Great recipe, a lot less lardy/sugary than other flapjacks but came out really moist and gooey. I used dates and sultanas with some mixed seeds...yum!

    no problems here - worked really well. MAde it first time with chopped fruit and added some seeds, made second time with less fruit and added some chocolate drops. Really nice recipe with a fraction of the calories and bad stuff of normal flapjacks - but every bit as enjoyable. Thank you for sharing

    Best flapjack recipe I have ever tried - and I have tried quite a few! Instead of the 150g of dried fruit I used 75g dried fruit and made up the other 75g with a few sesame + pumpkin seeds, mixed nuts, almonds and a few rice crispies! Very very popular and lovely. Thanks very much!

    These are brilliant - and less than half the fat and sugar of Ginger Flapjacks recipe, because of using an egg instead I think. I swopped the dried fruit to ginger and seeds like the other recipe to get the best of both moist delicious worlds!

    I tried this recipe out today using dates, apricots and raisins. It's really moist and tasty (not at all dry) and will make a good alternative to cereal bars in my kids' lunchboxes.

    These are fantastic. Not much need for an air-tight container in this house. My husband, 2 year old and 10 month old polished them off in no time. Delicious!
