Easy microwave meringues for kids

A quick and easy way to make tasty meringues...

Preparation

  • Total Time 16 mins

  • Cooking Time 1 min
  • 1 egg white (medium)
  • 255g icing sugar
  • double cream (for serving), whipped
  • fruit (for serving)
  1. Mix the egg white and icing sugar in a bowl until it forms a stiff dough (add more icing sugar if necessary)
  2. Divide the mixture into small balls (about a heaped teaspoon)
  3. Place 1 ball at a time onto greaseproof or parchment paper, on a microwave-proof plate
  4. Microwave on medium or medium high for 1 minute until puffed up and crisp (you might need to adjust the cooking time depending on the type of microwave)
  5. Take out of the microwave and allow to cool for a few seconds before removing from the paper
  6. Repeat until all the mixture is used up

Tips

This is a great recipe for showing your children how food changes when cooked. These meringues puff up to around 10 times their original size!

Serve with fruit salad or crush the meringues and mix with strawberries/raspberries and whipped cream for an Eton mess

    WHY WAS I NOT INFORMED ABOUT THIS BEFORE?! Game changer. Mine looked nothing like the pic, but they still tasted great and that's the main thing.

    Made these tonight, don't know what I did wrong but although they puffed up in the microwave they deflated when they came out! Still tasted nice but wonder if I didn't make the mixture stiff enough?

    I can't wait to try this recipe with my 3 year old. He loves cooking. My friend makes Meringues and puts chocolate chips in, I wonder if it would work in the microwave?

    Microwave Meringues were fantastic! Made them with my 4 yr old and he was amazed that the little balls of egg white and icing sugar and just a minute in the microwave they really were 10 times their size and they were lovely. Had them with raspberries and cream - naughty but nice!!! Also only took half and hour from start to finish.
