Easy gingerbread man recipe for kids

These are great for children to help make and are ideal after school snacks...

Preparation

  • 350g plain flour
  • 2 tsp ginger, ground
  • 1 tsp bicarbonate of soda
  • 100g butter
  • 175g soft light brown sugar
  • 1 egg
  • 4 tbsp golden syrup
  1. Preheat oven 190'C/Gas mark 5
  2. Put the flour, ginger and soda into a bowl and rub in the butter
  3. Add sugar and stir in the syrup and egg to make a firm dough
  4. Roll out to about 5mm thick and cut out your gingerbread men
  5. If you don't have a gingerbread man cutter then use whatever you have - stars and hearts are just as tasty
  6. Put a sheet of baking paper on a tray and evenly space out the biscuits, bake for 10-15 minutes until golden brown
  7. Leave to firm up for a couple of minutes before placing on a wire rack to cool
  8. Once cooled, decorate with icing if desired
  9. Makes approximately 20 biscuits

Tips

When you bake our gingerbread recipe the smell of it wafting around your house will be just wonderful. This recipe makes about 20 biscuits and it isn't just for Christmas, you can bake them all year round.

Kids will love helping you make this. From getting their hands messy rubbing in the butter, to rolling out the dough and using the cookie cutter, there are plenty of ways to get even little ones involved.

Refigerate the uncooked, cut biscuit shapes on a baking tray prior to cooking. About 15 minutes in the fridge is long enough to ensure your gingerbread biscuits retain their shape during baking and don't spread out too much.

I don't have a cutter; can I still make gingerbread men?

Absolutely! If you don't have any cookie cutters, but still want perfect identical gingerbread shapes, you could create a stencil by drawing a shape on some card and cutting it out (cereal boxes work well for this). Then just lay your stencil on top of the rolled-out dough and cut around for a perfect shape every time.

Storage tips

The finished biscuits will keep for up to five days in an airtight container. This makes them ideal for giving as gifts; pop them in a pretty tin or a paper bag with a ribbon around it for a cheap but delicious gift for Christmas or other special occasions.

Decorating your gingerbread men

If you want to add some icing, simply combine icing sugar with water until you get the consistency you want, and spread or drizzle over the cakes. You could also split the icing into separate bowls and add a few drops of different food colouring to each one, if you want an array of different colours.

Kids will love adding in detail like faces and clothes; icing pens are an ideal way to do this, or you could also use sweets, fruit, sprinkles or nuts (though don't give whole nuts to kids under five, as they can be a choking hazard).

Variations

  • Swaping the ginger for cinnamon or a few drops of vanilla essence if you don't like ginger
  • Swap golden syrup for treacle, if preferred

Make it vegan: just swap the butter for vegan spread and the egg for 1tbsp ground flax seed, mixed with 3 tbsp water.

You don't just have to make gingerbread men, either! Why not add some gingerbread women, kids or even pets? Or let your imagination run wild and make some gingerbread unicorns, flowers, hearts, or even just some simple, round gingerbread biscuits – yummy!

    I always avoided making gingerbread men as I remember them to be hard and inedible. This recipe is amazing!!! I think it’s the addition of an egg which makes them soft and light. I would highly recommend this recipe and My daughter loved icing them to look like members of the family. LUSH!

    Had a problem when sending last comment so sending pic again. Put dough in freezer for couple of hours before taking to kids after school club and letting them roll out and cut the shapes. I used the surplus dough to make more shapes. Told them we were doing gingerbread men then surprised them with decorated reindeer. Theme of evening was things that are not always as they seem. My ones were thicker as in picture. No complaints.

    I notice this can be frozen. I need to make the dough at home and freeze before it's rolled and cut. If left to defrost as i travel with it will the dough be sticky when its thawed out?

    The handy tip is great. It also works if you leave the dough for a bit (20 minutes-ish) before you do the cutting. I find it better to make a smaller quantity when baking with my son (aged 2) as he loses interest and starts squishing the shapes if we make too many. Another good way is just to make biscuits by rolling balls and letting him squash them with his hand :)

    Love this recipe, and children seem to love the biscuits too.. Makes enormous quantities when rolled quite thin so I usually freeze half before baking, to be used another time. If you chill the dough for half an hour or overnight before cutting out biscuits then you can use novelty cutters, so I've made things like dinosaurs, pirate ships, and dresses to be decorated at children's parties. A winner.

    Made a batch this morning with my 2 yo. Don't eat eggs so replaced with a bit of yoghurt. Was really dry so added a bit of orange juice. Turned out yummy.     Made these today with my almost 3 year old as she recently got a book 'the gingerbread bunny' from the library and wanted to make some and seen as its so miserable outside i decided it would be a nice rainy day activity. I halfed the recipe and got about 12 decent sized biscuits which is more than enough (the rest are waiting for my hubby coming home from work lol) i topped them with chocolate icing (naughty i know but in the book he has chocolate icing paws and ears) so a bit naughty but also very tasty - we're both snotty with the cold so i dont feel too guilty.     Fab Gingerbread recipe! This is the first time I have made them and am impressed. I actually used xmas cutters but the result was great. I needed a squidge more golden syrup and lowered the oven to 180 for about 12 minutes. I made then quite thick and they turned out lovely and chewy soft in the middle. I think the tip I can give is don't roll the dough too thin or you will end up with burnt biscuits and check them at about 8 mins in the oven. Yummy, yummy - didn't last 12 hours in our house!

    These are delicious and very easy! I wanted to make them for christmas tree decorations so left out the bicarbonate of soda- try doing that if you find they are spreading too much! Although they are probobly even yummier all risen and spread. The mix made about 40 for me, but my gingerbread man cutter isn't very big.

    To make without dairy is very simple, I do not use egg... melt your sugar, syrup and non dairy spread in a pan until sugar has dissolved. Leave to cool and sift dry ingredients into bowl. Then add sugar mix to bowl and stir till you get your dough, it may need a sprinkling of flour here. roll out as usual, cut, bake. Depending how big your gingerbread shapes are, I leave mine in oven between 8 - 10 min.

    This is a fab recipe. I made some gingerbread butterflies with my 4 year old daughter yesterday and we had lots of fun. She decorated them with icing pens and then sprinkled edible glitter on them - they look beautiful and she really enjoyed it.     I've made these so many times with my children, its fab. My children cut different shapes out and say its like playdough they can eat. It costs at least 79p to buy a ginger bread man from the bakery and I can get loads by making them myself for the same price with this recipe. Love it x

    ive just made these with my 13month LO 2 yr old stepkid and 10 year old sister we had so much fun made them slightly thicker so crisp on the outside and soft centred and they tasted lush :D

    Really lovely flavour, just the right amount of ginger (I did a heaped teaspoon as I don't like it too strong). Only thing is, I think I cooked them a little too long. I checked at 10 mins and although they were brown they were so soft to the touch I thought they couldn't be done so I did them for another three minutes. The result was that the thinner gingerbread men were very crunchy - too crunchy, really. So next time I'll stick to the 10 mins. (I used half light brown and half dark brown sugar as I didn't have enough light brown, and it tasted just fine - and looked a lovely colour, too). We decorated with smarties and jelly tots for the buttons, and chocolate piping icing (ready bought) for the eyes and mouth - very cute!

    love these! followed recipe except used 2tsp cinnamon rather than ginger and only use 70g of brown sugar and another 50g of normal sugar (ran out!) but they came out lovely and sweet anyway :D

    We always add a little extra bicarb as i found they didnt rise that well and were too hard/crunchy not soft enough, and always add more ginger as i like them with a stronger taste :-) They are fab, and a lot of my friends have used this recipe too after asking for it and also love them!

    I'm rubbish at baking but I've made these loads of times with my kiddies (Ages 2-11) and we cook them for an extra 5mins to make them hard on the outside but soft inside or a little longer for hard crunchy gingerbread! we use whatever cookie cutters are in season!! christmas,halloween,easter etc....

    I feel a bit rude reviewing this recipe as I modified quite a bit. I only had caster sugar and didn't want them too sweet or to go too crunchy so only used 140g sugar. I didn't measure the syrup but 2 good squeezes - about 2-3 deep/heaped tablespoon or 4 level/shallow ones. Also we creamed the egg sugar and mar together first, then sifted in the dry ingredients and mixed into a dough. The mix was a little crumbly to begin with but just added the tinest amount of water and pulled it together with our hands. My 3 year old has a limited attention span but loved making these. As with any dough you need to flour the surface but no more than I expected. They have come out lovely after 10 mins in fan oven. Just slightly softer than a biscuit would be which I how i like them. I found with my recipe they didn't spread that much but rose quite a bit.

    I found that a lot of flour needed to be used when rolling out to be less sticky, also i rubbed olive oil all over my hands before touching the dough and not one bit of dough stuck to my fingers, top tip!! Made loads of biccies which were delicious, don't bake for too long as they go like rock. I used treacle instead of syrup and 3tsp ginger 1 tsp cinnamon and they are delicious (in freezer to be defrosted and iced for xmas) next time am going to add some orange zest too.

    Have just tried this recipe, others who have commented saying that this was easy and fun to make obviously have better luck in succeding in this recipe then i have. The dough became so sticky that nothing could be done with it, i followed the recipe to the DOT. After i tried freezing the dough to try to make something from it, after freezing for a good 20min it was still extremly sticky and nothing could be done with it. All in all this recipe did not go well.

    Made these today with 2 tsp of ginger and we all (both adults and kids) thought they were fab. They took only 8mins to cook in a fan oven at 190 degrees C though so do watch them!

    I made these with my son and daughter, like some of the other comments the mixture was a little to crumbly but we just added few drops of water which made the consistency just right. We must have used smaller cutters as our batch made 30 or 40 men and ladies!     what a disaster, i made the receipe to the letter and it turned out more like a crumble mix... didnt know what to do as it didnt mention what to do if this happened so i added more syrup to GLUE it together... once rolled out, it was so sticky, i stuck to 2 surfaces i tried and i couldnt get them out. whole lot went in the bin... alot of people had success with this, im so novice, next time ill buy some in tescos

    Just made a batch of these and have to say that you can get ALOT of biscuits out of the one mix. I didn't cut out gingerbread men but small circles, which cooked to slightly smaller than standard gigner nuts and also some moons and butterflies. And there was enough dough left to make 4 really big letters for my two sons and nieces names!! In total I made 60 smaller biscuits and 4 larger letter ones! Will be making these regularly!

    Definately not enough ginger in this. I have tried upping the ginger and adding some chilli powder and that gives it a nice little kick without overpowering the ginger and my 2 year old LOVES them. Found cooking them for slightly less time gave a softer biscuit (which I prefer) and about 3 mins before cooking time is over - I add jelly sweet or smarties buttons... otherwise they don't stick!!

    I've made these several times and last week for a cake sale at my sons school - they sold like hotcakes! So easy to make. I make mine in the food processor and put the dough in the fridge for half an hour before rolling out - like pastry. If the dough is too sticky I just add flour - they always come out fine .     I made these with my 3 year old son last week & they went down very well. We used honey instead of syrup & cinnamon instead of ginger. The recipe says it makes around 20 but we ended up with about 40 - we obviously used a smaller cutter!

    Made two batches of these and managed to decorate the first. My little boy loved it when I wrote his name in icing on his. It's a great recipe and the gingerbread tastes delicious. I made a few for friends too - they make great presents which can be personalised. I also did some gingerbread stars and decorated them with white icing and silver balls, wrapped them in cellophane and stuck decorative labels on them. They looked and tasted lovely! Give this recipe a go - it's very easy to do, but don't over do it with the syrup otherwise the dough is too moist.

    sooooooo easy use treacle though, and ginger lots of ginger, mine turned out fab, although I did have some teething problems with the oven temp, it was too hot at first and my gingerbread men came out very large, turned it down and bobs ur uncle!

    After trial and error method with this recipe I eventually found my way! I used treacle rather than syrup which definitely gave them a better colour and also only used about a tablespoon of the sticky stuff otherwise I found it impossible to roll or cut. Also I added a teaspoon more ginger.

    Wow, a fantastic recipe!! Me and my kids made these together, and i am TERRIBLE at making biscuits, so didnt think they would even turn out edible! Its a fool-proof recipe though, and they tasted YUMMY!!

    not sure what i did wrong but found this super sticky to the point it kept sticking to anything it touched then in the over i spread them out and they still spread so much, lost their shape and am gutted as i was trying to make xmas trees and decorate them for friends children, maybe it was me but sooooo dissappointing!! x

    Have just made some xmas stars, using treacle rather than syrup, and they are really easy to make and totally scummy! I have made them as presents but don't know how many will be left....!!!

    Re: freezing - yes you can freeze the dough. When you want to use it, allow the dough to thaw fully before continuing.

    This is the best recipe I could find on the web. We didn't have golden syrup in the house though, but I found honey worked well as a substitute plus a bit of milk to make up the dough. We had so much fun making them, and sweet-toothed dh and dd loved them.

    We have spent this afternoon making Gingerbread Daddies and Gingerbread Grandads (with ties and scarves made out of the mixture put on before we baked them) for Fathers Day. We have got some coloured squeezy icing for decorating them tomorrow. The hardest part was definately getting my 4 year old not to tell Daddy!

    Great alternative to playdoh! 1.It starts brown! 2.Putting it in the oven means you control how long it takes. 3.You can use playdoh cutters! AND they taste great!

    Great recipe, kept 10 year old and 2 year old boys busy making gingergread Christmas trees. When they were cold they iced them and put on smarties and chocolate stars. Made lovely handmade gifts for the grandparents. Have made about 3 batches since Christmas!

    Just finished making these lovely Gingerbread men with my two children, well the youngest one sat in his high chair and watched :-) My little girl loved rolling out the dough cutting the shapes! However, we didn't space them out very well on the baking tray so it was more of a case of trying to judge a foot from a hand and so on when I was cutting through the sheet of gingerbread-oh well! It was fun :-)

    Made two batches of these over the weekend, the children loved every second of it. Seeing as it's close to halloween, we decided to make ghosts, pumpkins cats and skull cookies. They had loads of fun with icing them. Although I have only just removed the food colouring from my hands!

    I made these with my 4 year old daughter. They were fairly easy and great fun, (I did have to help with mixing) we didn't have a "man" cutter so we used polar bears, helicopter, moose, hearts, daisy and house shapes. They did spread quite alot but they were delicious! My husband and 2 yr old loved them too.

    These were a huge hit in our house. The only person to complain was my OH because he likes them with a bit more ginger so my girls made him some with more ginger in them (he is a big huffy kid). Really easy to make but i made the mistake of putting some too close together Whoops.

    fantastic recipe i made 30 ginger scooby doos yesterday (got the cutter from one of those cheap cake kits ages ago) they have all gone so im making more today i didnt have brown sugar so just used castor instead and it worked just aswell. they tasted just like the ones from the bakers.

    I made these with my little girl who is nearly two, we made gingerbread hearts and stars, and she loved rolling out the dough (and eating it....)and cutting out the shapes. Lovely easy recipe that the whole family enjoyed. Would recommend on a rainy day to keep little ones occupied.

    Made lots of biscuits ate them all week, stored in an airtight tin and even gave some to Grandparents. My two year old loved making these, the trouble was hunted at all local shops for gingerbread man or lady cutter, but did not find. Made lots of Butterflys,hearts, rabbits and stars. Have now got Gingerbread family cutters for next time!

    Have made these twice now & they are a huge hit in our house. The mixing was a bit tricky for little hands but the rolling & cutting was greatly enjoyed. Yesterday we made gingerbread biscuits by using a cup to cut out a round shape!

    My 2 year old son got a bit bored during the process of mixing the butter an flour together but enjoyed cutting out the shapes. The gingerbread men tasted great and made me realise I hadn't eaten one in about 20 years. I would recommend this recipe but remember to space them out on the baking tray or you end up with a continuous sheet of gingerbread........how was I to know?

    hmmm yum my little boy was desperate to make gingerbread men "that (he) likes" as he doesnt like ginger we used almond essence in ours and he and little sister are having great fun eating one as I write-simple and quick great recipe thanks.
