Easy family nut roast

A lovely simple nut loaf that you can make in advance and re-heat on Christmas day...

Preparation

  • 1 tbsp olive oil
  • 1 onion (small), finely chopped
  • ground black pepper (to taste)
  • ½ tsp mixed herbs (or other fresh/dried herbs)
  • ½ lemon (zested), grated
  • 1 tsp marmite
  • 75g fresh wholemeal breadcrumbs (not packet ones)
  • 150g nuts (choose one or more from walnuts, brazils, pecans, hazel nuts, cashews, etc), finely chopped
  • 100ml water (boiling)
  1. Gently fry the onion in the oil for a couple of minutes
  2. Add the pepper, herbs and lemon zest
  3. Mix the marmite in the water to make a stock, add this to the onion and bring to a simmer
  4. Meanwhile blitz some wholemeal bread in a food processor to make the breadcrumbs and then whiz the nuts until finely chopped
  5. You could do them at the same time if your food processor is big enough
  6. Add the nuts and breadcrumbs to the pan and mix until all the ingredients are combined
  7. Spoon into a small greased and lined loaf tin and cook for 30-40 minutes at 190'C/Gas mark 5
  8. Leave to cool in the tin for 10 minutes before serving (otherwise it will collapse, although it will still taste nice!)
  9. Serve with veggie gravy, cranberry sauce and all the usual roast dinner veg

You will need

Food processor - This best-selling one from Kenwood is just what you need and you can get it at Amazon.

Loaf tin - This durable one from Pyrex has a non-stick interior and exterior coating for effortless food release and easy cleaning and it's available at Amazon.

Tips

You can make this nut loaf in advance and keep in the fridge for a day before cooking or freeze it and cook when needed. You can use the raw nut roast mixture to fill veggie sausage rolls, nut wellington etc. (just wrap in pastry and bake.) The cold leftovers taste good with salad or in sandwiches... it tastes like a veggie pate.

If you are feeding any vegetarians at Christmas, check gravy, pastry, mince pies, mincemeat and stuffing ingredients for animal products

Variations

  • Put half of the mixture in the tin - top with a layer of vegetarian stuffing and then spread the remaining mixture over
  • You can buy small nut roasts (Cauldron nut roasts are nice), Quorn roasts (look in the vegetarian sections of your local supermarket) and nut roast mixes (from health food shops - avoid ones with a high percentage of peanuts in, unless you really love peanuts, as they can overpower the taste of the roast

    I have used an almost identical recipe for this nut roast for 20 years except I add 4-6 ounces (I'm old!) of cooked red lentils. Luverly!

    If you're entertaining veggies over Christmas, please consider something other than a nut roast! Some of us hate them, and it's rare that they taste any good (although the above does sound pretty good). Quorn fillets or chicken style pieces are simple, taste good and require a minimum of effort.
