Pretty little vanilla sponge cakes to make and decorate with the kids

Preparation

  • Total Time 25 mins

  • 100g butter, softened
  • 100g self raising flour
  • 100g caster sugar
  • 2 eggs
  1. Preheat oven to 180°C/160°C fan/Gas Mark 4.
  2. Get the kids to help weigh the ingredients, then add them to a large mixing bowl. Whisk all the ingredients together until creamy. Spoon into bun cases in a cupcake or muffin tray - this recipe should make 12 fairy cakes or 9 slightly larger cupcakes.
  3. Cook for about 10-15 minutes - to check they are cooked just press gently and they should spring back. Leave to cool in the tin for 5 minutes before leaving to cool completely in their cases on a wire rack.
  4. Once cooled, the cakes can be decorated with all different types of icing including glace icing or delicious buttercream icing

    We added a few drops of vanilla essence to the mix - spooned into half of the bun case then added about half a teaspoon of cocoa powder in the rest of the mix - spooned into the other side. 2 tone flavour/colour buns - six year old loved it (but did need 20 mins in the oven!).

    C C, your oven maybe too hot, try it at 160 fan for 15 mins or put it half a teaspoon on baking powder, that should fix the problem.

    I've started using this recipe and whilst they taste yummy they always seem to shrink after they've been out of the oven for 10 mins or so. They come away from the cases as if someone has taken it out and put it back again! If anyone know what I'm doing wrong your advice would be much appreciated.

    just made the cakes. mixed suger and butter seperate, then added eggs then flour then fruit, they have come out light and fluffy. Very easyto make. even i can make them. think i might add bannana nexttime, good way to use up brown bannanas..x

    I you want to make a bigger batch but are worried about the quantities or just want to left over eggs. Weigh your eggs with shells on, then add the same weight of sugar, butter, and flour. Guaranteed perfect no matter what the size of eggs are.

    I always add a desert spoonful of milk for every egg in my sponge mix. Then they keep better. Need to cook slightly longer.

    Yup, this is the one I have always used!!! I find if you cream the butter and sugar first, then add the other ingredients, the cakes are lighter.

    I've made these recently too, so quick, easy and scrum my, just made them plain for a p,ay date we were having, both my son, daughter and out little friend had great fun with pink and green icing, chocolate icing pens and sprinkles.

    I followed this recipe with my three year old daughter for fairy cakes and a loaf cake (35 minutes to cook) I added a little more sugar and a light strawberry flavoured yoghurt with freshly chopped strawberries which was so tasty.     Made these this afternoon with my nearly 3 yr old daughter. We made double chocolate cakes by replacing 4Tbsp of flour with cocoa and adding a good handful of choc chips (what wasn't eaten whilst mixing was taking place anyway!) Turned out lovely! Like another mum, I usually buy packet mix, but after trying this recipe, I doubt I'll waste my money on them again! ;0)

    I used this recipe today, I found that they made 12 muffin sized cupcakes, and about 18 fairy cake sized cakes per batch. Had great fun making this recipe with my daughter, who thinks they taste a bit pancakey, so may add a tablespoon of milk to the mix to see if that changes the flavour slightly. My muffin sized ones were cooked after about 13 minutes at 180c (basic electric oven) and my smaller ones about 8 minutes! I added a teaspoon of cocoa powder to half of the mix with the second batch, and they came out really yummy!! A very easy and does the trick kind of recipe. Will be using again! :D

    Hi Claire, you could substitue 1 or 2 oz of flour for the equivalent of cocoa, the more you put in, the stronger the flavour. Just sift it as you would with the flour. Happy baking!

    Nicola, I don't think it makes much difference. I usually use salted butter or stork margarine. If using unsalted, I add a tiny pinch of salt with the flour.

    I made these with DD1 for SIL's engagement party, we put caramel nibbles (like big chocolate buttons with caramel inside) and milkybar buttons in them... they were gooooooood :D

    Easy peasy baking at its best - you can't beat a good fairy cake and it is so lovely to pick different ways to decorate them - always a firm favourite. The key to a good light fairy cake is lots of air - so soft the flour, beat eggs well and mix until light and fluffy. Always use eggs and butter from room temperature rather than from the fridge as makes a big difference

    Made these today with my 19 month old and 8 year old they loved it was very easy and they tasted yummy. We made two kinds we added chocolate chip and raisins to different mixtures then put chocolate spread or icing on top with chocolate hearts perfect for valentines day :).

    Hi. Holland and Barrett have an egg replacement which works fine. My son has a severe egg allergy and I use this when baking. Hope this helps.

    Thankyou for this recipe! Me and my daughter just made them and stuffed chocolate buttons in before we cooked them! The 2 minutes before we needed to take them out of the oven we put more buttons on the top so they melted! A tray of 12 has almost gone now!! For someone that doesn't do baking very well they turned out well!! Easy recipe!

    try topping them with buttercream flavoured with flavouring. Chocolate ones go great with peppermint buttercream or orange buttercream. The possibilities are as endless as the flavourings you can buy.

    Hmmm......I added some mashed banana and ginger, but they cooked a bit stoggy and needed longer than 15 mins and a higher temperature. Maybe it was a mistake to add the banana - just had a few ripe ones that needed usuing up.

    These are just lovely and so easy to make. I used wholemeal self raising flour and added a few choc chips to the top of each before i baked them. Were supposed to be for the kids lunchboxes this week but are all but gone already and they are only 10 mins out of the oven!!

    This recipe turns out delicious, light and fluffy cakes. My daughter enjoyed making them with me and it's a nice quick easy recipe for little ones. I added choc chips to half the mix for a bit of variety. Yummy!
