A cheesy biscuit recipe the whole family will enjoy...

Preparation

  • 100g self-raising flour
  • 100g mature cheddar cheese, grated
  • 100g butter, softened
  1. Preheat oven to 180°C/160°C fan/Gas Mark 4 and lightly grease your baking tray
  2. Mix all the ingredients together to form a dough, if it's too dry and not sticking add a little water
  3. Roll out onto a floured surface to about 1/2 cm deep and using any small shaped cutter, cut out different shapes
  4. Bake for about 10 minutes or until golden colour
  5. Cool on a wire rack

Tips

These cheesy biscuits are so easy to make; a perfect weekend baking activity for the whole family. Kids will love getting their hands messy by combining the ingredients, rolling out the dough and cutting out the biscuits.

If you don't have a biscuit cutter, you can always just place a drinking glass on top of the rolled-out dough and cut around it to make uniform biscuits. Or get the kids to draw basic shapes like hearts and stars on cardboard (cereal boxes work well), cut them out and use them as templates when cutting the biscuits.

These are delicious on their own as an afternoon snack. Or try serving with chilli jam, chutney, fresh tomato or slices of ham. Alternatively, double-down on the cheesy goodness by serving as part of a classic cheese board.

Storage tips

The finished biscuits will keep in an airtight container for 2-3 days. You can also freeze them for up to two months – defrost overnight in the fridge before eating. Always make sure the biscuits are fully cooled before storing (otherwise, they'll still be giving off a little steam that could make the biscuits go soggy - Mary Berry would be horrified!)

Can I made these cheesy biscuits with plain flour?

Absolutely! While these work best with self-raising flour, if you don't have any to hand, you can use plain flour and baking powder instead. Just use the same amount of plain flour, and add about 1.5 teaspoons of baking powder.

Variations

  • Experiment with different types of cheese - hard goat's cheese works well, or use hard blue cheese for a sophisticated flavour. Red Leicester will give the biscuits a fun colour, while a milder cheese like Emmental is perfect for people who like a slightly less cheesy biscuit. Even varying the type of Cheddar can change the flavour dramatically; try vintage Cheddar for true cheese lovers, or a milder Cheddar for young kids.
  • Try adding some cayenne pepper, mustard powder or smoked paprika for bite.
  • For a delicious herby flavour, add a little thyme to the mix - the added herbs make the biscuits look really pretty, too!
  • Use fun cookie cutters to make these biscuits even more kid-friendly; ideal for kids' parties! Just keep an eye on them as they're cooking; smaller shapes may need a bit less time, while larger shapes may need slightly longer in the oven.

    These are so quick and easy to make with the children great for lunchboxes too. I adapted it slightly and added some dried parsley some cracked black pepper and 1/2 tsp of dijon mustard and they are delicious :)

    made these a few times but the dough comes out really wet and sticky, so cut down the fat in them and used 6oz parmasan instead which gives a really nice taste

    These were delicious ! The children love making them an we wil be doing chutney to as a hamper for family this Christmas. I used the more expensive extremely mature cheese and added 1 tsp of mustard just to make sure it had a great taste!! Yummy. So simple too, thanks :) have just froze first batch for Christmas gifts!

    These were absolutely gorgeous, and devoured by my son and his friend. They are almost too good for children, and I nearly confiscated them! They needed more than 10 mins in the oven. Mine turned out quite soft and melted in the mouth. Definitely a family favourite.

    Made these yesterday and added a tsp of Marmite to the mixture, but they were foul...very floury tasting and not very pleasant. The kids loved making them though, so all was not lost! :o)

    Hi everyone. I make cheesy bites and use low fat cheese and parmesan. Instead of butter I use flora lighter than light (only 19cals per tbsp!) and I chop some chives into it too. Then make a dough and proceed with cutting etc. We eat it with mango chutney and they r fab. So hope u all enjoy.x

    Hi Vanessa, for a lower fat version you can buy very low fat cheese- If you type in Rosemary Conley in google it shoudl bring up her website, she sells her own mature cheese its only 1.99 for a block and half the fat of most other mature cheeses. You can also buy it at Asda but no where else unless online, as far as im aware. :)

    Hi - yes, these are suitable for freezing. Re: how long will they keep? I'd say eat within 3 days if stored in an airtight storage container. In the freezer, up to 6 months.

    these are so nice im on my 3rd batch in 3 days the kids love them as does the OH and myself ive found that rolling the dough into a sausage wraping in in clingfilm chill for half an hour and then slicing them works aswell as rolling out and using a cutter. also i added a little cayenne to the mix gives them a nice little kick
