Easy cheese sauce for kids

Works well with parmesan, gruyère or cheddar - perfect sauce to make macaroni cheese and many other dishes too.

Preparation

  • 40g butter
  • 40g plain flour
  • 570ml milk
  • 100g cheese (parmesan, gruyère or cheddar all work well), grated
  • black pepper
  • nutmeg, grated
  1. Melt the butter in a saucepan on a low heat
  2. Stir in the flour and cook for a couple of minutes, stirring constantly, until you have a smooth paste
  3. Slowly pour the milk in, stirring all the time
  4. Bring to the boil, stirring with a balloon whisk, until thickened
  5. Add the grated cheese, stir until melted
  6. Add flavourings/seasoning (black pepper, mustard, grated nutmeg) to taste and stir well

Tips

Older kids can help by weighing out the ingredients and grating the cheese and nutmeg.

For a thicker sauce use less milk, for a thinner sauce use more!

Variations

  • Bechamel sauce - remove the cheese for a white sauce, which is perfect to make lasagne
  • Mushroom sauce - fry some button mushrooms and add to white sauce
  • Parsely sauce - add 3 tablespoons of finely chopped fresh parsley, stir well - perfect with fish

    I didn't have any nutmeg, but it was fine without. I use a really strong Cheddar for loads of flavour.

    This is so easy to make and it can be used with everything . My family would not have Sunday roast without it .

    I would remove the pan from the heat before adding the milk, this will help prevent any lumps forming. Once you have mixed some milk into the pan and you are happy there are no lumps return to a medium heat and mix until thickened. The longer this takes the better as it helps get rid of the taste of flour.

    For really quick cheese sauce, blend butter and (self raising or plain) flour until you get a soft, greasy buttery/ floury ball. Microwave to help process along. Add cold milk gradually and stir/ whisk until no lumps are present. If you add milk gradually while gently heating your sauce and stirring it a lot, you won't get lumps. Otherwise use a seive before serving! Microwave on LOW power, (you will have to nuke it for longer as it is on a lower heat). stopping to stir until it thickens. Leave to stand and sauce will thicken up. Be sure not to let sauce boil in microwave. Add mustard seeds for an extra dimension. Nutmeg is also good. If you really want lump free sauce, after blending flour and butter to soft creasy paste, you have to add milk gradually and stir over a low heat. This can be done in microwave by adding milk bit by bit as you heat your sauce.

    EASY CHESSE SAUCE AND LOW FAT 1 pint semi skimmed milk 2 level tablesp[oons of corn flour 1/2 tsp dijon mustard 3oz chesse black pepper blend cornflour in jug with a little milk slowly add bit by bit the rest of th milk stir in to smooth sauce pour in to saucepan and heat stirring antill sauce thickens dont let boil. almost impossible to get lumps. take from heat stir in chesse mustard and blackpepper serve soon as to stop film forming great for mac chesse or any pasta quick and easy. for me the flour recipe always used to go lumpy good luck.

    I made this for me and my 3yr old son, and he is a really fussy eater, but he ate the lot and so did i v.nice and simple to do, i just put carrots and brocolli in mine and in the white sauce i also added bit of cheddar cheese and then sprinkled some on top before oven. N again today im makin it again for sunday dinner with pizza,lol mmmm it must be nice.

    I made this into the cheese sauce using 50g Parmesan cheese and not quite a pint of milk as I wanted it thicker.Used this in a lovely fish pie - Yummy!
