These are great for using up ripe bananas...

Preparation

  • Total Time 35 mins
  • Preparation Time 15 mins
  • Cooking Time 20 mins
  • 3 eggs
  • 150g self-raising flour
  • 150g butter (or margarine)
  • 150g soft brown sugar
  • 2 bananas (ripe)
  1. Preheat oven 200'C/Gas mark 6 and line a bun tin with muffin cases
  2. Put all the ingredients into the food processor or hand whisk - start with butter and sugar first, then add the rest gradually until all the ingredients are in and smooth and feel light and airy
  3. Put a generous portion of mixture into each muffin case
  4. Pop into oven for between 12-20 mins depending on your oven
  5. Allow to cool before serving

You will need

Whisk - This stainless steel one measures 30cm and has eight wires for faster mixing. You can get it at Amazon for £3.99.

Food processor - This affordable one from Kenwood is equipped with sturdy chopping blade and a safety interlock, and can be bought at Amazon for £38.

Tips

Very simple, tasty recipe for yummy banana muffins. Get the kids involved by letting them help you weigh and measure the ingredients. Even young kids will love helping you mash the bananas - just pop them in a sealable freezer bag and let the kids squish them to their hearts' delight. 

Variations

  • You can also use this recipe to make a banana loaf, just extend the cooking time.

  • Add a sprinkle of brown sugar on top before baking if you'd like a crunchy topping

  • Try adding some chocolate chips to the cake mix before putting it in the oven

  • Sprinkle with icing sugar when they come out of the oven

  • Delicious served with ice-cream

    It's a fantastic recipe. Only thing I would change is less sugar. I only put half of the amount of sugar and I still find it too sweet for my 2 year old. I would use even less, maybe a quarter of it because banana is naturally sweet enough. Thx a lot for sharing!

    Fantastic for a quick energy boost when dd 9 and ds 8 arrive home from an energetic day at school. Cheap to make and a great way to use up last week's left over bananas.

    Very simple to make and tasty! Although mine always make 12 muffins and the cakes are a little soggy after 15 mins, so have to leave them in for the whole 20 mins 180 degrees in my fan oven rather than 200, otherwise they'll look too burnt. I also add a little nutmeg and/or cinnamon and a drop of vanilla extract for more flavour.

    Made these yesterday, actually turned it into a loaf. I only had one large banana and it still made it a very strong flavoured banana cake. Kids and husband (who doesn't like banana flavoured food) all loved it. Very easy to make

    Oooh my favourite banana loaf now in small portions, I can eat one a day instead of the whole loaf. I personally also add walnut, it just works. And top tip: stick the ancient banana you were about to throw away because you couldn't be bothered making these today in the freezer, ready whenever you need an overripe banana for this.

    Lovely cakes, my 2 year old enjoyed helping to make and eat them!. I used half caster sugar and half brown sugar as didn't have enough brown, also added a tbsp of golden syrup. Cakes turned out moist and light. Will be making again!

    Made these this afternoon (due to the rain!). They are yum and have been enjoyed by all the family. My 2yr old loved dropping in a few chocolate drops in to each cake! Cooked mine for about 15mins at 200 in a fan assisted oven.

    Made these yesterday with my 3 year old charge... He loved it, mixing all the ingredients together.... Cakes were very moist and they went doen well with strawberries and ice cream :0) Put them in for nearly 20 minutes, not greasy at all :0) very mourish thou!!! :0)

    I made these today. I used Lurpak unsalted butter and creamed the butter and sugar together before mixing in the flour and eggs, then used an electric mix. They are yummy!! and so simple. They were'nt greasy but like the recipie said I only used one banana. Hubby commented how moist they were and my 2 year old really enjoyed her desert treat tonight. Mine tasted lovely and sweet for some reason so don't think I'd want to add chocolate too it, were just right. I also cooked them for a lot longer about 23 mins in a fan oven on 200 (only because I forgot them). Maybe that soaked up the grease that some people have mentioned

    My son has an allergy to eggs so i make him banana cake whenever we have a family do or birthday, they are yummy, we just miss out the eggs and use 3 ripe bananas, and a teaspoon of baking powder, they are also goos with a teaspoon of melted cholcolate in the middle of each cake.

    These were amazing! i changed a few things, i used caster sugar instead of brown, i added an extra banana and spirinkled a flake into the mixture. They came out perfect, highly reccomended! you could always add a teaspoon of baking powder to help them rise too

    Just a quick suggestions but you could leave the sugar out of these and they are still just as scrummy without being too bad for you too!

    :( - Mine didn't turn out great-they were stodgy and heavy and not light and airy. I'm thinking i put too much banana in as mine were large bananas and I doubled the mixture and used 3 bananas (not sure why really) but they are edible just about. I'l stick to the right quantities next time. I made a loaf cake too and this was the same! Oops what a waste of ingredients!

    I made these but used 75g butter and sugar and used wholemeal SR flour. Also added raisins and cinammon and all turned out just fine :)will try again with choc chips!

    Really easy and quick. I followed the recipe exactly and filled 8 standard size cases. Look good and are light for banana cake but I found it a little plain tasting. I could see it would be a lot tastier with choc chips! Maybe I will add cinnamon next time or just more bananas.

    my twins both made a batch of these each today i only used 75g of butter and a teaspoon of cinnamon an a teaspoon of baking powder and they were fab we used a combination of them mixing with a spoon and an electric whisk. a very big hit they loved them i have tried banana cakes before and they can be stodgy but these were great will def make again :-))

    Hi, made these with the kids the other day, but to be honest i cheated and used a packet sponge mix and just added the banana, but they were beautiful! needless to say they all went, and my dd doesn't even like bananas - result!!! Defo be making them again.

    mine did not work at all!! dont know if i did something wrong since its my first time baking but they were not spongelike at all and all stodgy in the middle and they didnt rise..they taste nice still though lol. better luck next time i guess.

    Just made these. Might try less butter next time as they were a tad greasy. Put 2 bananas in instead of 1, whether that had anything to do with it not sure. They were delicious though with the choc chips! Sprinkled with icing sugar and they looked really good! Will be making again, but like I say prehaps with a tad less butter next time.

    I have just made these cakes for the second time this week! They were loved by my sons and my dad ;) However I found the first batch were VERY greasy and the bottoms of the tins were covered in grease. So when I made the second batch I used 70g of butter instead of 100g and only 50g of dark soft sugar. The difference was amazing!! They srill taste great but with alot less "naughty stuff" in. The first batch I made with some smashed up plain choc in and they were nice but this batch I put a handful of raisins and about a level teaspoon of cinnamon in. They really are nice and we shall be making them every week!

    Yum! Really quick and easy to make. I used my stick blender (left over from weaning!) and a batter jug I bought mail from Lakeland (it has a pouring lip and a lid with a slot big enough for the blender to go through, so the flour etc doesn't spray out). I mashed the banana with a fork and softened the butter in the microwave first, whizzed it up, then poured it (with my 3 year olds 'help') into silicone cake cases (from local pound shop). Results were probably more like muffins than fairy cakes but still yummy. Might try the balloon whisk attachment next time, I'm just too idle to do it the proper way!

    Fab!!! Very easy to make and bake. I had 'help' from a 3 year old and a 1.5 year old so I didn't think we'd have much success but they are absolutely fab!! I put 2 bananas in as they needed using and it didn't affect the end result. We made a batch of chocolate biscuits at the same time - thats how easy they were!! Thank you!!!! xx

    I was really looking forward to trying this recipe after reading all the reviews but unfortunately it was a disaster! Obviously we followed the recipe to a tee but even after 30 minutes in the oven the cakes had hardly risen and were still uncooked in the middle. We were unable to leave them in any longer though as the tops were very dark brown by this point. Very disappointing!

    I just made these they are so easy! I put raisans in instead of chocolate and they was YUMMY!!! They didnt even cool down we had them with ice cream and the kids loved they! I will make them again.

    I make these often but add different "extras" - ground nuts for the adults are yum, as are chopped dried fruits for the children's. We also make them & then cut out the top & add butter cream to make butterfly cakes - YUMMY!!

    Instead of marg try oil its just as light and ideal if you have a dairy allergy i use it in cakes all the time as my son has a dairy allergy and top it off with brown sugar sprinkled on top instead of choc chips. Very Yummy.

    Made them with my 3 year old today. U must put a generous amount of cake batter in because they don't really rise at all! Some cake receipes say just add to half way mark in cup cake case but with these i would say fill them almost to top with the batter :) Delicious with chocolate chips and sprinkle of icing sugar on top :) Or make them even more yummy with some butter icing on top? Think I might try that next time! xx

    I made these today with my 2yr old. They are brilliant! I doubled the mixture and then split into two bowls, added chocolate powder to one, so now i have two varietys, choc & normal, mmmmm yummy.
