Creamy potato and Brussels sprout soup

A delicious soup which is great for using up leftovers...

Preparation

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 potato (large), diced
  • garlic (1x clove), crushed
  • 300g brussels sprouts (cooked, and/or any other leftover veg)
  • 1l chicken stock (or vegetable stock)
  • 1 tsp fresh sage, chopped
  • salt (to taste)
  • pepper (to taste)
  • creme fraiche (to serve)
  1. Heat oil and cook the onion and garlic until soft
  2. Add the potato to the pan and cook, stirring occasionally for a few minutes
  3. Add the stock, bring to the boil, then reduce the heat and simmer for 10 minutes or until the potato is soft
  4. Add the sprouts/other cooked veg (boiled potatoes, carrots, broccoli etc), salt, pepper and herbs
  5. Simmer for a further 5 minutes
  6. Let the soup cool slightly and blend until smooth
  7. Reheat until piping hot and serve with a dollop of creme fraiche and some crusty bread (or freeze for another day!)

Tips

We all buy too much at this holiday period so on Boxing Day what the devil do you do with all those left over sprouts and roast potatoes - TURN THEM INTO A SOUP that's what. This might not sound very nice, but tastes better than it sounds! It’s a good way of using leftovers up on boxing day.

Variations

For a meaty soup, add pieces of bacon, ham or even leftover turkey.

For a chunkier soup, don't blend the ingredients, or add bits of cooked sprouts and potatoes.

Add some cheese for a really decadent flavour.

Spice things up with a pinch of warming ginger, turmeric and/or cumin.

    Made this for DD with leftovers. I don't like sprouts, but tasted before serving, and was really surprised! Turns out, what I don't like about sprouts is the texture - the flavour's actually pretty nice!

    I love sprouts and loved this soup, but surprisingly my kids and hubby hate sprouts and they loved this soup (age 13,9 and 16months) - didnt tell them what kind it was until they had tried it and given me their verdict, when I told them it was made with brussel sprouts they never believed me LOL, must try this even if just for curiosity FAB budget recipe.

    i made this soup up yesterday, xmas eve just really to see how nice it really is. and i dont mind telling you i was pleasantly surprised, its a nice tasty thick soup, next time were gonna add a little cream to it.
