Creamy pesto chicken pasta

A speedy and budget-friendly dish, this creamy pesto chicken is delicious!

- 400g pasta (of your choice, rigatoni works well)
- 3 tbsp pesto
- 300ml creme fraiche
- 240g cooked chicken
- fresh basil (to serve - optional)
- parmesan (to serve)
- Put the pasta on to cook
- Five minutes before the pasta is ready, add your pesto, creme fraiche and cooked chicken to another pan and bring to a simmer
- Drain your pasta reserving one cup of the cooking liquid
- Put the pasta back in the pan and pour over your sauce, stirring to coat and adding a few spoons of the pasta cooking liquid if you'd like to thin the sauce a little
- Season and serve with a generous helping of parmesan and a sprig of basil on top
