A speedy and budget-friendly dish, this creamy pesto chicken is delicious!

  • 400g pasta (of your choice, rigatoni works well)
  • 3 tbsp pesto
  • 300ml creme fraiche
  • 240g cooked chicken
  • fresh basil (to serve - optional)
  • parmesan (to serve)
  1. Put the pasta on to cook
  2. Five minutes before the pasta is ready, add your pesto, creme fraiche and cooked chicken to another pan and bring to a simmer
  3. Drain your pasta reserving one cup of the cooking liquid
  4. Put the pasta back in the pan and pour over your sauce, stirring to coat and adding a few spoons of the pasta cooking liquid if you'd like to thin the sauce a little
  5. Season and serve with a generous helping of parmesan and a sprig of basil on top
