A balanced dish that all the family can enjoy...

Preparation

  • 600g baking potatoes
  • 8 sausages
  • 1 onion, diced
  • 2 carrots, diced
  • 400g baked beans (one tin)
  • 400g mixed beans (drained)
  • 2 tbsp sunflower oil
  • 300ml beef stock
  • 2 tsp curry powder
  • 1 tbsp tomato puree
  • 50g cheddar, grated
  1. Preheat oven 180'C/Gas mark 4
  2. Peel, chop and put the potatoes on to boil
  3. Fry the sausages until brown in a pan, remove from pan and put on a plate
  4. In the same pan, add a little oil and fry off the onion and carrot
  5. Next add the beans, tomato puree, curry powder, and stock - simmer for 10 minutes
  6. Drain the potatoes and mash
  7. Next lay the sausage in the bottom of a casserole dish (save some sausages to decorate the mash), pour over the bean sauce and top with the mash
  8. Cut the remaining sausages in half and poke them into the mash
  9. Fork the top of the mash and put into the oven on 180'C/Gas 4 for 15-20 minutes until browned

Tips

Cowboy casserole is quick and simple and goes along way towards your kids' 5-a-day. This recipe makes enough for 2 adults and 2 children, making it perfect for family dinners, particularly on a cold winters' evening.

We recommend serving this dish with fresh green beans and/or broccoli.

    Anyone found salt and sugar free beans and a toddler suitable stock? Only managed reduced salt and sugar Heinz and very low salt kalo cubes so far. Come to think of it, no salt and sugar sausages? Maybe not the most toddler friendly meal.

    Just made this for our tea. Went down a treat even with my 18 month old who is a bit fussy at the mo. I didn't add the mixed beans as I didn't have them but threw in mushrooms. Yum! Will definate make again

    I've made similar dishes before and they freeze just fine Joanne. You may find the mash changes texture a little when it's re-heated, but it should still taste fine.

    made this for my 14 , 8 and 18month old all had clean plates . quick easy to do and can add chilli ect if you fancy it a little spicier . would be brill for bonfire night !

    We have just had this for tea, I have 3 older hungry boys and they ate loads of it. I think that next time I would start with the potatoes as we had to wait for them to be cooked enough to mash which wasted a bit of time. Brilliant recipe though as its all the kind of ingredients I have in the cupboard and fridge normally so nothing extra to buy. Thanks Helen!

    If they are kidneys beans from a Tom they are fine as they are already in water, if they are dried kidney beans then they need soaking

    I bought a new slow cooker a couple of weeks ago and it warns not to put Kidney beans in the sloe cooker. It states they need to be boiled in water for at least 10 mins to remove toxins. I didn't know this before and used to just throw them into chilli...my other half has sometimes had a bad stomach the next day! I don't like them myself tho so I don't know.

    Tried this last night, we really enjoyed it. I didn't add extra kidney beans or the curry powder though and chopped sausages up into chunks after Browning. Me and kids all had seconds! We had it with brocolli and sweetcorn. Thanks for recipe Helen.

    This is delicious. I actually changed the receive slightly and used chilli kidney beans and omitted the chilli powder. Also did Jacket potatoes and used the sausage and bean mix as the filling with a little cheese on top. Yummy!

    cooked this a few weeks ago for my OH who normally hates beans in any shape or form...he cleared his plate and went back for seconds. He's also just requested it for tomorrows dinner. This will be on my menu planner for years to come! Thinking of trying it with a sweet potato though as a little twist :) xx

    really love this dish! what makes it so great is its perfect for kids and adults. my averagely fussy 2 year old ate a whole bowl whilst going 'mmmm' haha! i swapped 2 of the potatoes for sweet potatoes which really have a variety of flavour.     Yum yum. Me and Hubby made this sat nite and were very impressed, we added spicy bbq sauce so it was a bit hot for our DS, next time will leave out the curry powder so he can have some too.

    Tried this for the first time last night and everyone loved it! Clean plates all round. I didn't put the kidney beans in as my husband isn't a huge fan of them and there were already some in the mixed beans. Will definitely make this again. Might try making it in the slow cooker next time

    My husband doesn't like anything like this usually, pulses, beans etc but even he loved this. It really was a hit with all the family, so easy too ( I also did it in the slow cooker )

    This recipe was very yummy. My two year old ate it (after I added some ketchup) and once she got stuck in she loved it too. Very filling and not expensive to make. I missed out the mixed beans and just used baked beans and kidney beans and it was delicious. Will definitely make it again. Carolyn

    This is absolutely delicious, I cooked it in a slow cooker and it was perfect. The whole family loved it and my 8 year old son was so impressed that he gave me a round of applause for the yummy dinner. This is definitely going to be on my meal plan now.

    I wasn't sure about this but it was absolutely delicious. Older boy ate it but two year old was not interested. It did look a bit messsy when cut up and served for little one so that may have put him off

    Wow this was lovely! This fed me, hubby 2yr and 3yr old! No sausages left but loads of mash and beans! A really great dinner using stuff I already had in the cupboards!

    Loved this. Used 1/2 sweet potatoes 1/2 white potatoes and used Kidney beans in chilli sauce and mixed beans in curry sauce so didn't need the curry powder - very yummy. Clean plates and smiles all round will definately do this again.

    I made this last night for a family of four, It could easy feed a larger family with extra veg ! It was lovely, very filling, very warming, easy to make and cheap !! will be making it again :-)

    I made this for the family and it was delious yum! Although i did make it without the potato topping as my oldest is not a fan of mash, but i did serve it with potato croquettes and veg and it was a lovely meal. I'm definatly going to make it again as it was a huge success.
