These delicious pancakes with a savoury twist make a brilliant side dish for pancake day. By adding grated courgette, you can also help your little ones get their five-a-day by hiding some fresh veg in their meal!

Preparation

- 50g plain flour
- 2 eggs
- 50ml milk
- Salt and pepper to taste
- 1 courgette, grated
- 2-3 spring onions, sliced
- Oil or butter (for frying)
- Greek or coconut yoghurt to serve
- Finely grate the courgette and place to one side
- Pour flour into a bowl and make a well in the centre
- Add eggs and whisk together with salt and pepper, adding milk until the batter is smooth
- Stir in the grated courgette and spring onions
- Heat a little oil or butter in a large non-stick frying pan
- Add heaped tablespoons of the batter and cook for 2-3 minutes
- Flip to cook the other side of the pancake for an extra 1-2 minutes (or until golden and cooked through)
- Repeat in batches until all the pancakes are cooked. Keep the pancakes warm on a plate in the oven on its lowest setting
- Serve with Greek or coconut yoghurt

Tips
As well as being a tasty choice for Pancake Day, these low calorie pancakes can be enjoyed all year round as an easy-to-make side dish, starter or snack. Plus, this recipe is great for using up leftover veggies.
Serve these savoury pancakes with a dollop of Greek or coconut yoghurt, topped with a scattering of finely chopped chives, parsley, thyme or basil.
For a twist of sweetness, you could also serve with maple syrup or a chilli jam dip – making this a perfect dish for sharing.
Variations
Combine both grated carrot and courgette to add extra veggies to this recipe. You could also add in some garlic for an even richer flavour.
If you don’t have a courgette handy, replace with shredded cabbage, which also makes a lovely and healthy alternative (you can either shred the cabbage yourself, or buy a bag of pre-shredded cabbage from your local supermarket).
