This is a nice easy recipe for tiffin made from digestive biscuits, quick and easy and no cooking!

  • 100g butter
  • 25g soft brown sugar
  • 3 tbsp cocoa
  • 4 tbsp golden syrup
  • 225g digestive biscuits, crushed
  • 150g raisins
  • 225g milk chocolate

For the topping

  • 100g white chocolate (optional)
  1. Add the butter, sugar, cocoa and golden syrup to a bowl and either microwave or heat in a saucepan over a gentle heat on the hob for a couple of minutes until melted
  2. Add the crushed biscuits, raisins and any other dried fruit and mix well (crunch some of your biscuits finely and leave some in bigger chunks, this gives a really good texture)
  3. Next press into a 20cm square greased tin
  4. Melt 225g milk/plain chocolate in a heatproof bowl over a pan of gently simmering water, pour on top and smooth over mixture
  5. Mark into squares and chill in fridge for an hour or so before cutting
  6. Optional: before cutting into squares, melt 100g white chocolate and drizzle over the top for an impressive finish

Tips

This is a brilliant recipe for cooking with kids. Even young kids can help by crushing the biscuits (pop them in a freezer bag first for minimal mess). Older kids will love helping you weigh and measure the ingredients, and stir them all together.

When you pour your chocolate over the top (if using) when it's just started to set, mark it by lightly running a fork through it in lines to give a textured finish

Heating tips

When heating the butter/sugar/cocoa/syrup mixture, either pop in a microwave-safe dish and heat on high for 20 seconds at a time (stirring after each 20 seconds), until melted, OR pop it in a saucepan on a medium heat and keep stirring until it's all melted. This part is for adults only!

If you're going for the white chocolate drizzle, the best way to melt the chocolate is in a glass bowl over a saucepan of water. Bring the water to a simmer, and make sure the bottom of the bowl doesn't touch the water. Break the chocolate into squares, add it to the bowl, and stir until all the lumps are gone. Alternatively, you can heat it in the microwave for 20 seconds at a time, stirring in between, until it's melted.

Storage tips

The finished tiffin will keep in the fridge for up to five days. You can also freeze it for up to two months – defrost in the fridge overnight before eating.

Variations

The recipe above will make a classic, traditional tiffin, but there are really no rules as to what you can include in your own personal tiffin! This is one of those recipes that's really fun to experiment with again and again, adding different ingredients each time until you find your favourite combo.

You could even split the butter/sugar/cocoa/syrup mixture into separate bowls, and let everyone in the family add their own favourite ingredients; a perfect activity with the kids on a rainy weekend afternoon!

Here are some ideas to get you started...

  • Use chopped dried fruits such as apricots, glace cherries, cranberries, coconut, nuts etc instead of raisins if preferred - a mixture of a couple of these is particularly nice
  • Berries work really well, too; strawberries, raspberries, blackberries... 
  • Add some of your favourite sweets, such as jelly worms, fudge or strawberry laces
  • Roughly chop up your favourite chocolate bar and add that into the mix, too!
  • Experiment with different biscuits; ginger biscuits add a lovely warm flavour, while wafers provide a totally different texture.
  • This tiffin recipe is great for using up any leftovers from Christmas or Easter such as plain chocolates, Christmas tree chocolates, biscuits such as biscotti, amaretti, or lebkuchen

If you really want to go all-out (perhaps as a way to keep the kids occupied), you could even make your own biscuits to go in your tiffin recipe. We recommend these super easy sweet biscuits – perfect for baking with kids and cooks in just 10-12 minutes.

    I love this! I make it kind of like a rocky road by adding marshmallows, too. Cereal like cornflakes works really well in there, too.

    I have made many times since discovering the recipe on here. All ingredients are the supermarket basics but I always use Green & Blacks cocoa which makes it amazing. Everyone loves it. I tend to melt plain and milk chocolate and add a spoon of cocoa to pour on the top so that it doesn't become too sweet.

    Have just made a second batch, this time I replaced the raisins with mini marshmallows! Ideal treat for my youngest son who has an egg allergy and so can't have any cakes. Now he doesn't feel he's missing out so much! :-)

    This is a firm favourite in our house. We tend to vary the fruit we put in including dried apricots cranberries etc. We also tend not to put the chocolate on top either as it makes it too sweet.

    I made these yesterday and doubled up the recipe. Used sultanas and glacier cherries and dairy milk chocolate for the topping......they are gorgeous, i cant stop eating them. As they are very rich and quite sickly i have cut them into very small squares. Thanks for the recipe x

    Made these for my daughter's 4th birthday party yesterday but don't think the little ones got a look in - the mums loved them too much! They are so easy to make which is a big plus in the stressful run-up to a party, you can make them a couple of days before if you keep them in the fridge. Seriously calorific but well worth being naughty for, can't recommend them highly enough!

    Just made this is a gift for people at christmas but there is no way this is leaving this house!! Easy to do, delicious, delicious, delicious! I would need to double recipe next time though. I used a 20x10cm tin rather than a 20x20 but there is no way it would have filled one that size. And the 225g of chocolate only just covered it so will need more of that next time too. I made it with half raisins and half cherries, gorgeous. Enjoy!

    I tried this recipe out with my two children. We were meant to be making it for my son't school bake sale but I think we ended up eating more than went. It was so easy and extremely yummy. I even took some to work and it was gone within seconds.

    My mil made this for my niece who is allergic to eggs and so can not have regular choc cake, just 1 problem tho - she put in 25g of biscuit insted of 225g and wondered why it was so runny! Stil tasted lovely tho mite i add even when messed up!
