Chocolate chip pancakes

These fluffy and chocolatey American-style pancakes are perfect for anyone with a sweet tooth. Enjoy them on Shrove Tuesday with a generous dollop of whipped cream or a scoop of vanilla ice cream

Preparation

- 100g self-raising flour, sifted
- 60g caster sugar
- 1 medium egg
- 150ml milk
- 50g chocolate chips
- Oil or butter for frying
- Whipped cream or vanilla ice cream to serve
- Mix the sifted flour and caster sugar in a bowl or jug
- Add the egg and beat well to get a fluffy texture. Then slowly pour in the milk a little at a time until you have a smooth and runny batter
- Fold the chocolate chips into the mixture
- Heat a drop of oil or butter in a frying pan. When the pan is really hot, pour in about 3 tablespoons of batter
- Cook for just under a minute until the bottom is golden brown. Use a spatula to keep an eye on how it's cooking and turn to the other side once the first is cooked
- Remove from the heat once both sides are golden brown and the pancake is cooked through
- Repeat with the rest of the batter until all the pancakes are cooked. Keep the pancakes warm on a plate in the oven on its lowest heat setting
- Serve with whipped cream or vanilla ice cream along with a sprinkle of chocolate chips

Tips
For some extra chocolatey goodness, serve with melted milk chocolate or Nutella on top.
These pancakes also taste great with a topping of Lotus Biscoff spread, peanut butter or almond butter.
Other delicious toppings could include maple or golden syrup, chopped bananas, nuts or fresh fruit (but remember never to serve whole nuts to children under 5).
Enjoy these pancakes while they're warm so the chocolate chips are still gooey!
Variations
Add cinnamon to the batter for chocolate chip cinnamon pancakes.
If you don’t have any self-raising flour, don’t worry! With this recipe, you can make banana pancakes with baking powder instead.
Keep any leftover pancakes and use them as a tea-time or after school snack. Simply pop them in the toaster or under the grill and spread a little butter on top.
