Chicken risotto (no wine)

A delicious meal all the family can enjoy...

Preparation

  • 1 onion, diced
  • garlic (2x cloves), crushed
  • 250g chicken breast, chopped
  • 225g arborio rice
  • 100g peas
  • 750ml stock
  • 1 tsp parsley, chopped
  1. Fry the onion and garlic in olive oil
  2. Add the chicken breasts and fry for a couple of minutes more
  3. Put in the rice and fry until all coated in oil but not browned
  4. Add about 500ml/1 pint of stock and cook until almost all absorbed
  5. Gradually add another 250ml/half pint of stock until risotto is creamy, then pop in a cup full of frozen peas
  6. Stir well then serve with chopped parsley

Tips

This is a very simple chicken risotto recipe and it's also easy for children of all ages to eat - no cutting up as it's already done!

If you don't have arborio/risotto rice, you can make it with standard rice, too.

Variations

Risotto makes a fantastic base for whatever's in your fridge. Try ham & peas, fish & leeks, or mushroom & spinach for a veggie version. Or add some chorizo and make it more like a paella. The options are limitless!

    Delicious, quick family meal! I didnt expect it to be so tasty with such simple ingredients but we enjoyed this so much! I added a bit of parmesan for some cheesy goodness :)

    Hi Katie C, you can use any chopped chicken for this recipe. It says above: 2- 4 chopped chicken breasts (or any chopped chicken, it doesnt have to be breast meat). If you use less meat then just add more veg. Hope that's ok.

    How can you use this for the four meals section, using one lot of the split in to four whole chicken when it states above you need four chicken breast?

    To answer Amie R - normally you cook the rice until it shows translucent - but only for a couple of minutes and it should not catch! To answer Helen B You can freeze it - the only thing that may go a little strange is the peppers but thats all. Also dont be surprised if you end up adding more hot water or stock than in the recipe as sometimes it needs a little longer!! Hope this helps and enjoy!     Ive never made risotto before so a few questions. As rice takes so long to cook normally and there is no indication of time, how long to I cook the rice for after adding the first 500ml of stock. Also I think that you have to continue to stir when cooking risotto, is this true. Thanks for any comments about how long to cook.

    I made this tonight, was not sure about it until i tasted it and loved it! Whole family liked it including my 3yr old who took a look and said ew! But a quick taste and he tucked in happily. Was plenty left over until people had seconds!

    I made this for dinner last night, it was lvely. I added 100g more risotto rice and increased stock so 3 x as much stock as risotto. I also added about 100g Parmesan. My 3 year old vegetable hater of course cried when she saw it and wouldn't eat it, nothing new there! It was really nice though.

    Made this for Dinner tonight. It was lovely. I am not a great cook but found this very easy. I used leeks instead of onion and red and green peppers. I also put in two dollops of philadelphia - yummy. My 4 year old loved it too!. I used browned off chicken from yesterdays roast as I am sick of throwing good food away when food is so expensive nowadays.

    Made this tonight. Was really tasty. I used leeks instead of onions as I don't like onions and only used 2 chicken breasts. Also added yellow pepper, and sweetcorn as well as the other ingredients listed. I also added some mixed herbs near the end and we had grated cheese on top. This made loads and fed myself, DD 6, DD 4 and DD 13 months and there is about the same amount again leftover which have put in the freezer for another night. Definitely recommend this!

    I cooked this tonight as a surprise Valentines meal & we both really enjoyed it & certainly will be doing it again.I used chicken thighs & a few drumsticks,marinated in chilli & garlic with peppers an mushrooms instead of frozen veg.Really tasty dish :0))

    I would recommend to everyone to bake their risottos - rice to stock ratio is roughly 1:3, 20 mins in the oven at 200C with lid on and it's done! No stirring and fuss!!! I never make risottos the traditional way any more as that's soooo easy and therefore we have them more often.

    Brilliant recipe - best risotto I have made, really easy. I modified it a little, adding chorizo as well and courgette diced finely, also reduced the quantities as only 1 small adult and 2 children's portions were needed. Will definitely use this recipe as a base EVERY time and modify the ingredients to suit whatever's in season. Fab!!

    I fry Chorizo with the onion and veg to spice things up a bit for chicken risotto. Try making plain risotto and stir in peas and Parmesan at last minute , instead of potatoes with your meal.

    I like to use the chicken from a leftover roast chicken as well. You get a really yummy taste from the brown meat. Also, I like to stir in some fresh lemon juice and lemon zest at the end, then just leave the pan with the lid on for 2 mins whilst you get bowls and forks out. Everything goes really gooey and gorgeous!

    It is fine to freeze the risotto. Just ensure you let it defrost fully before use :o)

    lovely, i halved the recipe as was only for me and my 2yr old and added 60g of parmesan at the end for extra flavour. little one a bit under the weather at mo so wasn't expecting him to eat but he still ate half a portion!

    We make a very similar risotto but we put grated parmesan cheese (about 2tbs) towards the end of cooking. It really boosts the taste as I find it a little bland otherwise. It is my toddler's favourite dinner.

    Made this and added bacon. My picky 2 year old was scooping it in with a fork in one hand and a spoon in the other. My four year couldn't eat all his but asked me not to throw it away, but to save it for another day! abs gorge!!

    When I make this I add celery at the beginning and use the stock and leftover meat from a roast chicken. The stock adds extra flavour and goodness! It is fine to reheat as long as you heat it to piping hot and allow to cool, also great to freeze in childsize portions.

    you could vary it to use left over roast or stewed meat instead of buying chicken breasts - less expensive that way and a great way to use leftovers. Or you could do a veggie version using roasted veg instead of the stir fry ones. Yum.

    Hi, just had to write; this is a great recipe, with food we ordinary people have in the cupboards. I made this yesterday, it took me two minutes to prepare and everyone ate it, no leftovers at all, and with a five year old daughter that makes a lovely change. What's really great about this recipe is 1) not much washing up to do, and 2)you can make variations without any bother at all, i.e., using different rice, adding different ingredients.     I used chicken stock but you can use vegetable stock. Alborio rice you can buy from any major supermarket. I cooked this today & it went down well with my hubby & my 15mth old although my five year old didn't like it & he's not usually a fussy eater...
