Chicken quesadillas for kids

This easy and flexible Mexican recipe is great for children as you can hide the veg!

Preparation

  • 2 tortilla wraps (large)
  • 1 tbsp oil
  • 1 skinless chicken breast (cut into strips)
  • 1 onion, sliced
  • 1 red pepper (small), chopped
  • 1 yellow pepper (small), chopped
  • 50g cheese (hard cheese), grated
  • 1 tsp mild chilli powder (to taste)
  • 1 tsp cumin, ground
  • 1 tsp coriander, ground
  • garlic (1 clove), crushed
  1. Heat the oil in a frying pan or wok until hot
  2. Add the onion and chicken and cook on a high heat for about 3 minutes, turning regularly
  3. Add the spices and garlic if using and continue to stir around for a couple more minutes
  4. Add the peppers and cook on a medium heat until the vegetables have softened (check the chicken is cooked through if your chicken is sliced thickly) - normally around 5 minutes
  5. Turn on the grill to high
  6. Place one of the wraps on a baking sheet and grate about half of the cheese onto it
  7. Spread the mixture from the pan evenly on top of it and cover with the other wrap
  8. Grate the rest of the cheese on top and place under the grill
  9. Cook for 2-3 minutes until the cheese melts
  10. Remove from the grill and cut into slices, like a pizza (pizza wheels cut them up well!)
  11. Serve with chopped tomato salsa

Tips

My children love wraps but are still a bit small for eating a whole one (and even eating one or half a one makes a huge mess) so I often make quesadillas instead. It's great for hiding veg and the recipe is really flexible. And cheap too! The spices are optional if you have fussy children but most do like them. You can use Mexican seasoning if you like but these spices are the main ingredients so it's much easier to use what you want out of your store cupboard.

Keep the veg as dry as possible as it stops the quesadilla from going soggy

Variations

  • Try adding different vegetables – courgettes, grated carrot, sweetcorn, broccoli and chopped tomatoes all work well
  • Use beef mince instead of chicken

    We love these! Have tried with a few different fillings and our favourite has to be chicken, coriander, red pepper and cheese.

    I make these all the time for snacks but do them slightly different . I heat a frying pan put 1 wrap in the hot dry pan then add cheese and filling add other wrap on top. Leave for a minute or two then flip and leave for another two minutes, slice and serve :)
