A simple recipe to make a delicious chicken jambalaya...

Preparation

  • Total Time 55 mins
  • Preparation Time 15 mins
  • Cooking Time 40 mins
  • 3 tbsp vegetable oil
  • 900g chicken, chopped
  • 1 onion, finely chopped
  • 2 red pepper, chopped
  • 2 garlic (cloves), finely chopped
  • 275g long grain rice
  • 2 tbsp tomato puree
  • 1 tsp thyme, dried
  • 1 tsp oregano, dried
  • ¼ tsp chilli flakes (optional), dried
  • 225g chorizo sausage, chopped
  • 400g tomatoes, chopped
  • 570ml chicken stock
  • 3 spring onions, finely chopped
  1. Heat the oil in a large pot over a medium-high heat
  2. Cook the chicken until lightly browned, stirring frequently - once cooked, remove with a perforated spoon and transfer to a plate
  3. Reduce the heat to medium
  4. Add the onion and peppers and cook for 5 minutes or until soft
  5. Add the garlic and cook for 1 minute
  6. Add the rice and cook for 5 minutes stirring constantly
  7. Add the tomato puree, thyme, oregano, chilli, chorizo, and tomatoes - season with black pepper and cook for a further 2-3 minutes
  8. Return the chicken and any juices to the pot - stir in the hot stock
  9. Bring to the boil, then cover and simmer for 25 minutes over a low heat, or until the rice is tender
  10. Remove from the heat
  11. Sprinkle with spring onions and leave to stand for 10 minutes before serving

Tips

This recipe is one of our family favourites. My little boy who is 4, loves it, and asks for it at least once a week. It's got the added bonus of being a one pot dinner, so saves on too much washing up!

Variations

  • If you don't have thyme and oregano, just use some mixed dried herbs instead
  • Slow cooker method: cook all ingredients together in a slow cooker as per the recipe above (except the chicken stock and rice) to make a stew, add a drop of stock if the stew is too thick, cool and freeze any unused stew to reheat another time - cook the rice separately in a pan with the stock, drain and serve with the stew/sauce on top

    Great one pot tea that the whole family enjoys (children from 3 - 16). I always add extra vegetables, ie carrots, courgettes, sweetcorn, sometimes peas; to be honest any little bits that I have that need using are great added to this. I have never used spring onions though. It is not a particularly expensive tea either, buying the quantity of chorizo that you want from the cold meat counter often works out cheaper than pre packaged. Also, you don't have to add chicken to it, especially if you add extra veggies like I do.

    Delicious! I didn't use so much chicken though - only about 500g and that was plenty for 7 of us. Also, I added some cooked peas right at the end. Will definitely make this again.

    Netmums has inspired me to cook and this recipe was lovely and easy to do. I had half the quantity of chicken so adjusted the recipe & it came out perfect. I used paprika instead of chilli flakes as didn't have any. Had no idea what it would turn out like so very happy.

    This is lovely recipe but the taste of herbs was a bit over powering....next time I would only use half a teaspoon of each herb and see if that makes a difference.

    we tried this recipe and it was really nice. Going to make it for my little one and see what she thinks as she didnt have it last time it was made. I'm sure we froze left overs as well. The rice didnt quite have the same texture but it was still fine.

    Hi Emma,you can either cook the rice with the chicken and the stock as per the recipe steps, or cook the rice separately to add in your plate. Good luck.

    My husband and i loved it- although it is a little time consuming to prepare. Left out the spring onion and mixed with mashed potato for my very fussy 16 month dd ( she doesnt like rice) and she seemed to love it too! Thanks for recipe- will definately be cooking again!

    A favourite in our house have just given the recipe to a neighbour and a friend, i also add prawns for a luxury version also add frozen peas 10mins to end then stir in after standing tie complete. YUMMY!!!

    Made this tonight. It was yummy!! I'm doing slimming world so left out the chorizo, but added a pinch of smoked paprika instead. Also added mushrooms, courgette and celery and a tin of butter beans. I had the oven on so I baked it in there and it was really good. Definitely will make this again. Thanks x

    DELICIOUS!!!!!! Made this tonight,adding mushrooms.My 2 sons sged 3 and 5 loved it and ate evrything,even the peppers and mushrooms which they usually pick out.I didn't use as much chicken or chorizo but was still more than enough for us 3,plus enough for dinner tomorrow :) will definately be making again,stace.

    Thanks for this recipe... I made it today and it was really tasty. I used 1 and a half pounds of chicken which was more than enough... but I will definately make it again.     I made this for tea tonight, I was suprised by my own capabilities! I'm not the greatest chef but it was lovely! Hubby and I tried it before I make it for the kids. I thought 10oz rice was too much and I ended up putting in another half pint of stock towards the end to cook the rice a bit more, but other than that it was great. It produced two large portions, which neither of us finished and 2 decent helpings for lunch tomorrow! definately will enter my favourite easy receipe list!

    I am just about to make this for tea but I'm thinking that 2lb of chicken is a lot of chicken and 10oz of rice is a lot of rice for a family of 4, my daughter is 5 and my son is 2. Normally we would have 1lb of chicken and 6oz of rice between us on say a curry dish. Did everyone stick to the 2lb of chicken, 10oz rice?

    Made this dish tonight as part of my mission to get our 5 and 4 year old to try new dishes! It was a huge hit. We all loved it! Will 100% make this again, did not use the chilli and it tasted great. Would agree it probably does need the chorizo to give it a bit of a kick though.

    TOPTASTIC Totally Totally love this dish, even my mum does but she ony eats white meat so instead of the chorizo I used the fresh turkey ones from asda & she loved it.

    I am in Spain on self catering hol at the moment & managed to cobble together a "version" of this! For a more "child friendly" / "what I had available" version - I used hot dog sausages instead of chorizo which went fown really well & gave a smoky flavour to the dish - also instead of peppers I added a tin of sweetcorn - well I was trying to remember the recipe & did have limited ingredients - but my children loved it!!

    This recipe is brilliant. I didn't do the whole quantities but still had left overs for lunch next day and it tasted even nicer! The biggest plus point about this is that both my 3 year old and my 13 month old loved it and cleared their plates which was brilliant. This will feature as a regular on our weekly menu. I also added some pineapple and didn't put in red pepper. Definitely needs the chorizo too as I tried it the first time with ordinary sausage and it wasn't a patch on the chorizo. Pineapple added nice taste too definitely put that in again.

    Another thumbs up for this recipe! Everyone enjoyed it - DH has had left overs for lunch today! I didnt add as much chorizo as the recipe suggest but did add some frankfurters as well which the kids loved!     Hi, I made this today, exactly as the receipe apart from I bought the tinned tomatoes with chilli already in and it was gorgeous. My boys aged 5 and 10 loved it and although it was a little bit spicy, it was fine for the boys. I will definately make it again. Claire

    Made this last night. Couldn't get Chorizo here (I'm in Singapore) but used Italian pork sausages which were lovely. My son's very fussy but he did eat some of it (high praise from him!) My daughter loved it - even if she was wearing more of it than eating it - but she did enjoy it. Went down very well with my hubby - said it was like Chebu Gen (terrible spelling probably) - a dish from his home country of Senegal! Will definitely make it again.

    Loved it, loved it, loved it. Used pineapple instead of chorizo but dh wants me to put chorizo in next time. Lasted dinner on Fri and lunch on Sat which was good for the purse strings too.

    You must try this, all mine loved it, even the youngest ate it, he is 10 now and is VERY VERY fussy.I put normal sausage in as well and i also added a little white wine.It was lovely and all of it went (a bit of a pain cos i wanted some leftovers for my lunch tomorrow). Just going to look for some more ideas in the recipes.

    This was amazing! I tried it just for myself and my other half, to sort of give it a practice run before feeding the family (well, not my youngest, he is only 5 months old!). It was great, really yummy and I can see myself chopping and changing it slightly, adding more veggies etc. Also having long-grain rice it is low-GI...I cooked without oil too, so can only assume that (minus chorizo) it is a good food for those mummies trying to get rid of their tummies!!! YUMYUMYUMYUM!!! :-)

    I tried this recipe last night and all the family loved it, even my fussy 3 year old. The only thing that was picked out was the chorizo sausage. The spices were just enough to flavour the dish nicely, and I wouldn't describe it as too spicy for kids. There was plenty to go round the 4 of us, even my very hungry husband and 6 year old who had second helpings. I'll definitely cook this one again. Thanks Lynn for sending in this recipe.
