A fab one pot meal with stacks of flavour...

Preparation

  • Total Time 55 mins
  • Preparation Time 5 mins
  • Cooking Time 50 mins
  • 1 onion, chopped
  • 4 chicken breasts, diced
  • 200g chorizo sausage, sliced
  • 1 tsp chilli powder
  • 800g tomatoes, chopped
  • 250ml chicken stock
  • 2 garlic (cloves), crushed
  • 1 tbsp tomato puree
  • 450g potatoes
  • 50ml soured cream (optional)
  • 1 tbsp fresh coriander (optional)
  1. Fry onion until soft and golden
  2. Add chicken and cook for a couple of minutes each side
  3. Meanwhile cut the chorizo into chunks and add to pot. Fry for 2-3 minutes until the juices start coming out. At this point you may want to add some chilli powder to however hot you like it
  4. Add tomatoes, stock, tomato puree, garlic & a dash of red wine if there's some open!
  5. Add potatoes, cover pan and simmer for about 30-40 mins, or until potatoes and chicken are almost cooked
  6. Top with soured cream and fresh coriander
  7. Serve with crusty bread drizzled with olive oil

Variations

  • Add a chopped yellow or red pepper, courgette or mushrooms
  • If using a slow cooker - add all ingredients to the slow cooker, cook for 8 hours on low

    Don't bother using fresh tomatoes - imo it actually tastes better with tinned ones, and much less faff.

    I make this regularly as it is a firm favourite. I use 2 tins of chopped tomatoes (one of them being chilli toms) instead of fresh and don't bother with the olives, sour cream and coriander. Delicious

    I decided to make this chicken and chorizo stew in my slow cooker after seeing good reviews and positive comments. I followed the recipe exactly and was very disappointed as were my family. The dish was very bland and in my opinion, the ingredients did not work well together! I would not make this again.

    I made a few tweaks for my tastes - no olives and half the chopped tomatoes - then added courgettes, peppers and some paprika. It was delicious!

    we had this last night, i was a little worried wether my little one would eat it or not but she loved it, and my husband and son both had second helpings!! i made some flat bread to go with it, perfect for mopping up the last lots of gravy! yum!!

    The times for this dish seem to be based on cooking it on the hob. How long does it take in the slow cooker? Sorry to be thick, but i've just bought my slow cooker and haven't yet worked out how to adjust times on recipes in order to cook them in the slow cooker!

    Really lovely, we left out the olives. I used the juice of a whole fresh lime and fat free creme fraiche on top(just a little) instead of sour cream. Fab!!

    Done this in my slow cooker today and it was amazing. My 10 month old and 3 year old loved it. Hubby will be lucky to get his as I rather enjoyed mine too

    This has become a firm favorite in our household. I made it for the first time about a year ago. I used left over chicken (usually from a roast the night before), it's a great way to use up your leftovers and make two meals out of one bird!

    I made this, this afternoon but halfway through cooking, I realised I had no tomatoes! Soo, I cooked some onions, added chorizo, then added chicken, then hot chilli powder, black pepper, chicken stock, tomato puree, red pesto, sweetcorn, sliced mushrooms and at the end, cooked rice. DS1 LOVED IT and ate 2 platefuls, he never does that :D

    instead of tinned tomatoes and chilli powder, you can use a fresh or jar of arrabiatta sauce too - firey tomato and chilli sauce which is great. I have also done it with beef instead of chicken which works well.

    This is a great recipe but instead of chilli, I added mixed herbs and instead of potatoes I added rice (about 15 mins before serving). Great results and great for the slow cooker. Will defo be making it again.

    Cooked this in the slow cooker while camping this weekend. I fried the chorizo first so I could cook the onions and the chicken in the flavoured fat and I added a red pepper. I put too much chilli in to feed to the kids (they had spag bol) but the adults absolutely loved it. The chicken was so succulent it just fell off the bone. This will definitely be a camping fav as it's so easy and can cook all day while we're out having fun. I served with mash and broccoli. Thanks for the recipe.

    This has become a fav in our house, and there is usually enough left over to freeze. Even fed it to my inlaws! Have tried it both on the hob and slow cooker. Great meal without being stuck in the kitchen for ages! Yum!

    I do find this dish can be oily, especially when its been in the slow cooker all day, but it is very tasty!! My children love it and its become a huge family favourite. We eat it with cheese topped bloomer, yummy!!!

    i must be the only person who didnt like this dish then (apart from my hubby) i made it in the slow cooker and the only thing i did differently was use chopped chicken rather than breasts as thats what i had in oh and i added some peppers but i found it quite bland and neither of us liked it very much so i wont be trying it again. i followed the recipe so not sure what went wrong

    I used this recipe as a base, but adapted to use what i had in already, my creation used a tin of butter beans instead of potatoes, powdered smoked paprika instead of chilli powder, and a chopped carrot, all tipped in the slow cooker and came out perfect, very tasty and filling, i will use this recipe again im sure, however i have 2 portions left to freeze so wont need to just yet. many thanks for sharing

    This dish is absolutely fantastic. Lobbed everything in the slow cooker this morning (no need to pre-cook anything) and ate it 8 hours later. Will take the advice of others next time and try with peppers too. Next time we have guests - this is what we're having, as it's a no fuss meal but tastes great. Thank you Jo for this recipe

    Made this in my slow cooker and was a hit with ALL the family (thats rare). Even my 6 year old asked if she could have more chorizo in her portion (usually she hates chorizo). Definitely going into my book of 'tried and tested family meals'. I added in carrots and pepper to mine.

    All my family love this recipe. Usually bung it all in the slow cooker and reduce the quantity of stock and use just one tin of tomatoes. Gorgeous with buttered bread straight out of the oven.

    I added a few capers and some paprika, and it turned out really yummy! :) @ Gemma M I've had problems with potatoes still being hard after hours of cooking, and have learnt to cut them quite small, no more then inch cubes or half-inch slices, and to make sure they are on the bottom and submerged.

    Delicious, a really tasty meal, I added a courgette and some mixed peppers and used boneless skinless chicken thighs - definitely a success even my husband enjoyed it and he is very fussy, not tried it on the 2 and half year old yet - another fussy one but am hoping he likes it Will be making again 100%

    This is very similar to my recipe, I use chicken legs and like to put plenty of basil in too. Yummy.

    I just put it all in raw. Some people prefer to brown it but it works without doing that.

    Yummy!!! Made this tonight & it went down a storm, was told by DD1 that I have to make it every Sunday from now on! Even DD2 ate it all & she is so fussy at times! Made it with lamb instead (had ran out of chicken)and only used 1 tin of tomatoes, left out potatoes as I was going to have it with rice but then realised had ran out of that too (just before payday & need to do big shop), so had it with potato wedges & veg instead, was delicious & the girls loved dipping them into the sauce! All in all a resounding success!!!

    Delicious!! Put this in the slow cooker this morning,cooked it for 7 hours, and we've just eaten it for dinner. Its really good. I left out the potatoes and added a tin of cannellini beans instead. I only used one tin of toms and a bit less stock as it looked enough for the sauce and used a mixture of chicken breasts and thighs to satisfy fussy eaters! There is some sauce left which is too tasty to bin so I will freeze it to pour over a grilled chicken breast another time. I served mine with rice, broccolli and green beans. Yum. Thanks Jo x

    Wow! It really is true - simple ingredients are best! What a find this recipe is. You will not be disappointed. I would go so far as to say if you have to cook for someone who you have never met before and want to impress - this will do it! It's easy and gorgeous. I always check reviews before making recipes and all the reviews on this recipe were right. It is gorgeous. I did a slightly different version! I cooked it in the slow cooker without the potatoes. When I got home I put it all in a bigger pan (we only have a slow cooker for 2) and added some basmati rice and a little more stock until the rice was cooked. Had to watch it tho, the rice sticks - only takes about 10 mins with basmati rice. Also I used veg stock, not chicken which was fine. I also used chicken drumsticks (I prefer the flavour of thighs and drumsticks!) I left the skin on for flavour. Take it off for low fat I guess!

    I do this but with rice not potatoes and its more like a risotto/paella thing. Tastes lovely and all my family enjoy it! Just have to keep adding water/passata to stop it getting dry through the cooking process. Yummy!

    Made this tonight in the slow cooker - delicious! I also added a can of chick peas & some ras el hanout (Moroccan spice mix). Loved the fact I just needed to put everything in the slow cooker, and let it cook away on high for almost 5 hours. Thumbs up!

    I cooked this yesterday for tea for 4 adults.. it was lovely :-) a big hit!! i cooked it in the slow cooker on high for 5hours and it was perfect, i also used sweet potatoes instead of normal and added sweet red peppers to the recipe too.. Will definately do this again :-)

    Great easy recipe - had this for supper tonight and added chopped up mushrooms and courgetttes to the mixture. I used new potatoes and they cooked through perfectly. Will definitely be making this again - yummy!! For anyone interested it worked out to approx 410 calories per serving, great, tasty and filling especially as I'm on a diet!!

    I did this for our sat night bonfire party for 8 adults. It went down a storm! I used chicken thighs and the chicken was so tender and the chorizo (bought from deli counter at morrisons. I did jacket spus to go with it as couldnt get that many potatoes in my slow cooker. Did it for about 9 hours in the slow cooker.

    We called this chicken and chorizo chilli...we used boneless and skinless chicken thighs instead as they have more flavour and are cheaper...got the chorizo from the deli as it works out more value more money...added peppers..no potatoes and my oh added olives to his at the end. We had with rice and it was absolutely georgous...will have again. thankyou. :)

    Had this for tea tonight and hubby said it was my new signature dish so I guess this was enjoyed. I added a red pepper chopped at the begining of the cooking time and I left on all night on medium heat in slow cooker then all day on high heat. Absolutely delish definately a regular on my menu now.

    I made this last night and it was a resounding success and loved by all 4 of us (including a 3 and a 1 year old!). I made mine in the slow cooker and used chicken thighs instead of breast as I find that the thighs tend to stay nice and moist. Definitely one that will be repeated!

    Had this for tea tonight and it was delicious. Think I'll add more chilli next time as we like it really spicy and might add some chickpeas as well. Fed 4 of us and I have enough left over to have with rice tomorrow for myself and two daughters as OH is away. Very economical meal!

    I have cooked this recipe and I must say that chorizo is my new best friend as there are different varieties. This went down well with all of the family and can be served with pasta, cous cous or rice. I have added celery (which I really don't like but the chorizo helps disguise the taste),sweetcorn and peppers.

    This was gorgeous and so simple. Just put it all into the slow cooker. Hold back on the chilli, think 1tsp is ok for children but 2tsp is a bit too hot. Lovely with the sour cream, bread an big glass of wine!

    YUMMY!!!! Made this today in the slow cooker (minus potatoes as DS1 only eats mash potatoes) and served it with rice. I used chicken drumsticks and added yellow and green peppers. It went down a treat with both myself DS1 (5) and DS2 (23 months), plus my parents. DS1 liked it so much, that he had the remainder (just really the sauce left) just now for his supper.     This was delicious! I made it on the hob and found the sauce to be a prefect consistency, not too watery at all. The flavours were lovely and potatoes cooked thoroughly. I added courgettes which went really well. I'll definitely make this again!

    I've not done it with chicken pieces but I'd have thought it would work - as the meat is mainly cooked in the sauce it shouldn't dry out which would be my only concern. Lucy

    This is much more tastier than normal chicken casserole. I made it in the slow cooker and added, mushrooms,courgette, peppers and olives. I also added a tin of new potatoes. Definately comes a firm second though to my faviourite recipe on this website - chicken Jambalaya. I think it is the consistency, even though I added a lot of cornflour found it quite watery.

    I browned the chicken and onions first then added all the ingrdients as well as courgettes, peppers and mushrooms to the slow cooker and the result was gorgeous! I left out the potatoes and served with rice instead. My kids even had seconds which is unheard of.

    I made this dish in the slow cooker, put it on at 10.30pm and by 9am the next morning the potatos were still hard :S Everything else perfect so i fished all the potatoes out and i will boil fresh ones for dinner 2nite Otherwise chicken and chorizo is perfect!!!! x
