Preparation

  • 2 tsp light olive oil
  • 1 onion, finely chopped
  • 1 Granny Smith apple, grated
  • 2 chicken breasts
  • ½ tbsp fresh parsley
  • 1 tbsp fresh thyme
  • 1 chicken stock
  • 50g white breadcrumbs
  • 1 tsp salt
  • 1 tsp pepper, ground
  • 50g plain flour
  1. Heat the olive oil in a pan and sauté half the onion for about 3 minutes
  2. Peel the apple before grating
  3. Using your hands, squeeze out a little excess liquid from the grated apple
  4. Cook the chicken
  5. Mix the apple with the chicken and remaining raw onion, herbs, stock cube (from 1 year) and breadcrumbs and roughly chop in a food processor for a few seconds (season with a little salt and pepper - from 1 year)
  6. With your hands, form into about 20 little balls, roll in flour and fry in shallow vegetable oil for about 5 minutes until lightly golden and cooked through

Tips

These little balls make perfect finger food for small children, or for babies who have started to wean onto solid foods. 

The grated apple adds a delicious flavour which makes them appealing to young taste buds. Delicious hot or cold.

Variations

To introduce your baby to new flavours, why not try swapping the chicken for pork and/or the grated apple for grated carrot?

    I was a little nervous making these but it was worth the effort!! I used two small apples which made it lovely and moist... It's brilliant that you can freeze them! So next time will be making double and freezing a batch.

    When it says use a chicken stock cube can a use a knorr chicken stock pot. And do u add water.

    Are these chicken balls freezeable if so how long for

    I use turkey thigh mince instead, much cheaper and more flavoursome. They are fine if you bake them in the oven instead of frying. I also put a bit of chopped leek in the mixture too.

    oooh,I havent made these for afew years.Used to make them all the time when my older 2 were little.The recipe used to be with chicken mince.Now you dont seem to be able to buy that anymore,I havent made these.Will have to try again

    Love this dish. I've been cooking it for almost 20 years! No need for raw egg if you use raw chicken....( they are one and the same anyway!)

    I tried this but it didnt go down too well with my kids! I thought they were quite nice. Also the balls kept breaking up so dont know if an egg is needed to bind them better?

    I've made these before using raw chicken and they came out absolutely fine. It's just like making a burger and you wouldn't cook the meat first then either.

    I think these must be beyond my cooking expertise! They fell apart while I was frying them, and the ones that stayed together were more cremated than fried :( The bits all still tasted good, though!

    I make these using the following method - poach the chicken and then put the chicken, grated apple and breadcrumbs into a food processor and whizz. I have also added carrots (cooked before) and then make into balls - it sticks together itself and then I bake instead of fry. Yum! Lovely eaten cold in lunchboxes too.

    These are suitable for freezing,have the book,it just doesn't state how long you can store them for. At a guess from doing catering I would say 2 days chilled and up to 2 months frozen. Hope this helps

    I just made these! tis very yummy and a big hit with the tot. We are vegetarian though so I used chicken style quorn, but it worked just as well! Will deffinately be making them again.
