Cheesy baked tortillas

An easy to make, budget-busting dish...

Preparation

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 red pepper, chopped
  • 400g chopped tomatoes (1x tin)
  • 400g beans (1x tin), mixed
  • 400g red kidney beans (1x tin)
  • 125g mature cheddar, grated
  • 5 tortillas
  1. Preheat oven to 190'C/Gas mark 5 and lightly oil a large ovenproof dish
  2. Heat the oil in a frying pan and fry the onion and pepper 5 minutes until softened, stirring occasionally
  3. Add the tomatoes and beans to the pan, season with black pepper and heat through 5 minutes, stirring to mix lightly
  4. Divide half the cheese between each tortilla then divide the tomato and bean mixture between them (add an extra tortilla if there is any mixture left over!)
  5. Roll up and arrange in the dish, seam side down
  6. Sprinkle with remaining cheddar and bake 15 minutes until golden

Variations

  • Adding chicken or mince beef instead of beans if you want a non vegetarian version

    Simple to make with store cupboard ingredients. I added some chilli powder to the bean mixture which gave the dish a bit of spice. Went down very well with all three generations living in our house.

    I added some chilli powder to the mixture as it was just for me and my husband and also simmered the bean mixture for about 30 mins to soften the kidney beans. Was really delicious and easy to make, will definitely be making it again!

    I'm always on the look-out for meat free recipes. This was easy and delicious and my husband and I loved it. Unfortunately my kids are fussy eaters and they weren't keen. Their loss though!

    I love this recipe . It can be thrown together with store cupboard ingredients on an evening when you have a hungry house full , but little energy to cook !

    I followed the recipe exactly then added meatballs! So so yummy!!! I don't really like beans but after making this they were yummy! I added some garlic bread to and a side salad! This feed 6 adults! and they all loved it

    I use chick peas instead of red kidney beans and also add a few finely chopped carrots to bulk it out (and get more veg in my kids!)

    I have done this with a tin of baked beans instead of kidney beans. Still tastes just as nice

    Tried this last night and a big hit :) only added half a tin of tomatoes as 2 1/2 of us eating. Also tried with different types of tinned beans as not that fond of kidney. Have also tried similar with half tomatoes poured over the top and then cheese, very Mexican - enchilada style! Thanks

    I made this with pancakes instead of tortillas to bring the carb content down and not make it so 'bloaty'. It was gorgeous and made enough for four big meals with salad. Pancakes are cheaper than tortillas too!

    This meal was lovely and VERY filling, i only used half a can of tomatoes though as i thought it would be quite runny with a full tin, it was enjoyed very much by myself and partner and our almost 2 year old, i'll be making it again.

    Y.U.M!!!!!!!! We've just (literally!) eaten this. I too ran out of cheese lol but it was fine and I couldn't get any chilli beans as they sold out so used normal mixed beans with a chopped fresh chilli. It was enormously filling as we served it with salad and butternut squash wedges and I didn't give the kids a full portion as they simply couldn't eat that much but guess what's for lunch tomorrow?! A really reccomended recipe. I'll definitely cook it again....next week lol.

    Made this tonight, was flippin delicious! Ran out of cheddar so grated red leicster on top. I loved it, 3 year old loved it and hubby who is a total carnivore loved it. I was gobsmacked when hubby liked it as normally if a meal has no meat in it hubby moans and moans but he cleared his plate and said that we will def be having that again!

    Tried this one again tonight - see comment 22/10/08. Much better this time kids didn't protest, although they said they liked it they didn't want it again and 2 year old finished the lot after refusing the first time I made it!I used plain tortillas for the kids and Garlic ones for my husband and I.

    I made this dish this week for me, my husband and toddler and the full lot went straight away - very clean plates!! Will definately be doing it again next week have already bought the ingredients. We have it with a side salad but you dont need much as it is very filling cat

    i had to substitute alot of the ingrediants as i didnt have the full list and it turned out okay but abit sloppy , hubby said was ok for a snack but needed some salad or rice for future.

    Hubby and I loved this although the two older kids (aged 5 yrs)ate it under protest and said they didn't like it and didn't want it again. Two year old just plain refused it.

    Save even more money by making your own tortillas. This recipe makes 6. 6oz plain flour 7tbsp cold water 1/2 tsp salt 1tbsp olive oil Mix all ingredients together and knead for 5 minutes.Cover with damp cloth and leave for 1/2 hr. Divide into 6 and roll out very thinly.Cook for 1 minute each side on a hot frying pan. Can add herbs/garlic powder etc to flavour if needed.

  • I used a tin of baked beans instead of the kidney beans. The tortillas were really nice (even the kids liked them!).
